It is a hot papaya stir fry that is served along with Fafda and kadhi when you walk into the streets of Gujarat early in the morning. In this recipe the raw papaya is stir fried along with green chillies and salt making it absolutely refreshing and tasty for breakfast.
INGREDIENTS
2 tsp Oil
½ tsp Mustard seeds
1/4 teaspoon Asafoetida (hing)
1/8 tsp Turmeric powder
2 Green Chillies
Sugar ½ tsp
Curry leaves few
Raw papaya , grated 2 cup
Salt , to taste
METHOD
Grate the papaya. Not very thin .
Add turmeric + salt over the grated papaya , mix well and keep it aside.
Heal oil in a pan over medium heat; add the mustard seeds , allow to crackle.
Add hing + green chillies and give a stir for few seconds .
Add the papaya + sugar and mix well .
Stir fry for 3 to 4 mins on medium flame till it softens a bit .
Once done drizzle lemon juice , give a nice mix and off the flame .
Transfer the papitha nu sambharo to a bowl and serve.
Serve with Khaman Dhokla , Fafda , and Green Chutney .
