Gujarati farali patties

GUJARATI BUFF VADA / FARALI ALOO PATTIES

This farali recipe made during the Navratri fasting, or other upvaas or vrat days like Ekadasi, Mahashivratri or Janmashtami or Gauri vrat.

Buff vada or nariyal ki kachori is a Gujarati specialty which is a popular snack to have during fasting.The outer covering is made with boiled and mashed potato and a delicious tangy mix of  coconut, herbs and dry fruits is used for stuffing.the tangy stuffing makes it so delicious .

INGREDIENTS FOR COVERING

  • Mashed potato – 1 cup
  • Arrowroot – 2  tbsp
  • Salt / black salt  to taste
  • Arrow root flour for dusting – 3  tbsp
  • Oil to deep fry

METHOD

Boil potatoes. Peel, and grate. The grating is very important instead of just mashing, as it will create a nice smooth, homogeneous mixture needed for the patties.

Add salt, arrowroot flour. Mash and mix well. Keep it aside.

INGREDIENTS FOR STUFFING

  • Mashed potato – ¼ cup
  • Roasted and crushed peanut – 2 tbsp
  • Sugar pwdr – 11/2 tbsp
  • Desiccated coconut – 2 tbsp
  • White sesame seeds – 1 tsp
  • Fennel seeds / saunf – powder – 1 tsp
  • Finely chopped coriander leaves – 2 tbsp
  • Ginger + green chilli paste – 1 tbsp
  • Finely chopped raisins  – 1 tbsp
  • Black salt / salt to taste
  • Lemon juice – 2 tsp
  • Pomegranate seeds – 2 tbsp [ optional ]

METHOD

Take all the ingredients mentioned above in a bowl and mix well.

METHOD FOR MAKING THE PATTIES

Make golf ball sized balls from the potato mixture.

Flatten it in the palm and stuff it with 1 tbsp  of stuffing mixture on top of it.

Bring together the edges of the potato patties, seal it and form either into a round ball or a flattened patty.

Roll the patties in some arrowroot flour.

Heat oil in a pan for deep frying .

Once oil is hot, fry the pattice balls until golden brown.

Drain and remove on absorbent paper .

Serve hot with any side accompaniments like chutney / sauces /dips

SIMILAR RECIPE WITH FRESH COCONUT – Aloo kachori

NOTES

  1. Instead of arrow root  flour we can use sama rice flour or corn flour or sabudana flour pwdr
  2. The round ball shape works well for deep frying, whereas the flattened patty shape works well for shallow frying.
  3. The balls can be refrigerated and used later .
  4. Adjust ingredients as per taste.
  5. We can also add finely chopped cashew .
  6. If making for upvas ,use rock salt .
  7. We can use any stuffing of our choice .
  8. Instead of deep frying ,you can bake it  or air fry it or fry in appe pan .
  9. We can flatten the balls like pattice and shallow fry also .
  10. For less absorbion of oil ,we can dust the balls with corn flour .
