Restaurant style cauliflower masala
RESTAURANT STYLE CAULIFLOWER MASALA
INGREDIENTS
- Small florets of cauliflower – 3 or 4 cup
- Onion – 1
- Tomato – 2 small [ not sour ]
- Ginger garlic paste – 1 ½ tsp
- Red chilli pwdr- 1 ½ tsp or as per taste
- Coriander pwdr – 2 tsp
- Garam masala pwdr – ¾ tsp
- Turmeric – ¼ tsp
- Sugar – ½ tsp
- Ketchup – 2 tsp
- Cashew – 6 or 7
- Fresh curd – 2 tbsp [ not sour ]
- Fresh cream – 2 tbsp
- Kasoori methi pwdr – ¼ or ½ tsp
- Jeera – 1 tsp
- Salt to taste
- Oil to shallow fry
- Oil + ghee / butter – 1 ½ tbsp.
- Finely chopped coriander leaves to garnish
PREPARATION
1- Clean the cauliflower ,chop it into small florets or as desired .Soak it in hot water with salt + turmeric for sometime .Again wash ,rinse and drain the water .Pat dry it .
2- Shallow fry the cauliflower till colour changes lightly .[it should not become brown / also should not get burnt ] remove and keep aside .
3- In a mixie jar take the onion + tomato + ginger garlic paste + cashew + red chilli pwdr turmeric pwdr + coriander pwdr garam masala pwdr + ketchup + salt + sugar + curd and blend it into a smooth paste .
METHOD
Heat oil + ghee / butter ,add jeera and let it crackle .
Add the ground masala paste and stir fry for 8 to 10 minutes on medium flame till the rawness of masala leaves .
Be careful as the masala may stick to the bottom as it has cashews – keep stirring .
Now add the fried cauliflower and mix well .
Add 1/2 cup water and mix well .[ water as per the consisitency you want – the masala has to be thick or semi thick not thin ]
Simmer on low flame for 1 or 2 ,add kasoori methi pwdr + cream and mix well .
Off the flame and garnish with coriander leaves .
Transfer to a serving bowl .
Serve with any Indian bread or even jeer rice / basamati rice .
NOTES
1- This recipe happened accidently ,actually was not in the mood to cook ,so wanted to just blend everything together and make it .I just had cauliflower which myself and my kids don’t like .So just chopped it small and fried it .End result both my kids luvd it .The recipe was done in a jiffy and also it got over in a jiffy. I gave it the name of restaurant style ,as the masala actually did taste so .
2- This recipe is especially for those who don’t like cauliflower .
3- I chopped it into small florets so that my kids don’t create fuss.
4- Also frying the cauliflower enhances the taste .
5- U can also boil and add .
6- Y not add fried potatoes + boiled peas together .
7- Try the same recipe with paneer or any other veges or fried chicken or even boiled egg .
