Petha recipe

INGREDIENTS :

  • Petha Fruit [white pumpkin ] – 1 kg [ ripen ]
  • Sugar – 600 gms
  • Alum pwdr [ fitkari ]- 1 tsp
  • Few drops of any food colour
  • Also we can use any food essence of our choice

METHOD

Remove the soft pulpy part, peel the green skin with the thick portion .

Chop into small cubes or any shapes like balls or heart  or thin slices and poke all over with a fork.

Take 1 litre water + alum in a pan and mix well.

Add the petha and keep it soaked for 10 to 12 hours.

Then drain the limestone water, wash off the petha pieces well. Keep in a plate.

Keep 1 litre water to boil in a pan ,once the water boils add pethas. Boil them on high flame for 20 minutes.

Drain the water and keep aside.

Take  sugar + 2 cupwater in a pan , stir and boil till the sugar dissolves .

Add the food colour and essence  and mix well.

Add the petha pices to sugar syrup, cook until dense on high flame.

When syrup thickens and becomes of 1 string consistency , off the flame .

Let it soak in the  syrup for overnight.

After 12 hours, the  petha will  release its juice, and the the syrup will again become thin / loose. Stir and cook it again on high flame till the syrup thickens to one string consistency.

Off the flame and allow the syrup to cool.

Drain and remove each petha and arrange on a net or steel sieve or wire mesh ,so that the excess syrup drips down.

Keep under the fan to dry for few hours.

Agra’s famous Petha sweet is ready.
