Aloo baigan ki sabji
ALOO BAIGAN KI SABJI
INGREDIENTS
- Brinjal small – 4 [ cubed ]
- Potato – 2 small [ cubed – smaller the size ,lesser the cooking time ]
- Onion chopped – 1
- Tomato chopped – 1
- Oil – 1 tbsp
- Jeera – 1tsp
- Red chilli pwdr – 1 ½ tsp
- Turmeric – ¼ tsp
- Coriander pwdr – 11/2 tsp
- Sugar – ½ tsp optional
- Salt to taste
- Finely chopped coriander leaves to garnish
METHOD
Heat oil in a pan ,add jeera and let it crackle .
Add onion and fry till golden.
Add tomatoes + salt and cook till oil separates.
Add chilli pwdr + coriander pwdr + turmeric pwdr , mix well and srtir fry .
Add potato + brinjal and mix well .
Stir fry for a minute .
Add ¾ cup water ,mix ,cover and cook .
Cook till the veges are done and water evaporates.
Open the lid , add sugar and mix well.
Finally garnish with coriander leaves .
Serve as side dish.
VARIATION
Replace coriander pwdr with sambar pwdr .
