Aloo baigan ki sabji

ALOO BAIGAN KI SABJI

INGREDIENTS

  • Brinjal small – 4 [ cubed ]
  • Potato – 2 small [ cubed – smaller the size ,lesser the cooking time ]
  • Onion chopped – 1
  • Tomato chopped – 1
  • Oil – 1 tbsp
  • Jeera – 1tsp
  • Red chilli pwdr – 1 ½ tsp
  • Turmeric – ¼ tsp
  • Coriander pwdr – 11/2 tsp
  • Sugar – ½ tsp optional
  • Salt to taste
  • Finely chopped coriander leaves to garnish
BAIGAN ALOO

METHOD

Heat oil in a pan ,add jeera and let it crackle .

Add onion and fry till golden.

Add tomatoes + salt and cook till oil separates.

Add chilli pwdr + coriander pwdr + turmeric pwdr , mix well and srtir fry .

Add potato + brinjal and mix well .

Stir fry for a minute .

Add ¾ cup water ,mix ,cover and cook .

Cook till the veges are done and water evaporates.

Open the lid , add sugar and mix well.

Finally garnish with coriander leaves .

Serve as side dish.

VARIATION

Replace coriander pwdr with sambar pwdr .
