ALOO TIKKIS STUFFED WITH GREEN PEAS

INGREDIENTS FOR COVERING

  • Mashed potato – 4
  • Bread slices – 4 [ blend into crumbs ]
  • Corn flour – 2 tsp + extra for dusting
  • Salt to taste

METHOD

Pressure cook the poatato ,peel and mash it .

Either use a masher to mash or grated the boiled potatoes .

The mixture should be smooth without any lumps .

Add bread crumbs + corn flour + salt and knead it .

Divide the mixture into equal portions and roll into smooth balls .

Keep aside .

INGREDIENTS FOR STUFFING

  • Green peas blanched – 1  cup [ boil for just 2 mins in hot water ]
  • Oil  – 2 tsp
  • Ginger garlic green chilli paste – 2 tsp
  • Garram masala pwdr – ½ tsp
  • Coriander pwdr – 1 tsp
  • Amchur pwdr – ¼ tsp OR 1 tsp lemon juice
  • Chaat masala pwdr – ½ tsp
  • Finely chopped coriander leaves for garnish
  • Oil for deep fry or shallow fry .
  • You can reduce green chilli and add red chilli pwdr

METHOD

Heat 2 tsp oil in a pan , add jeera and let it splutter.

Lower the flame and add ginger garlic paste .

Fry till raw smell leaves.

Add green peas and mix well.

Stir fry for 2 mins.

Finally add all the masala pwdr + salt and mix well.

Stir fry for a min .There should be no moisture .

Off the flame and garnish with coriander leaves .

Stuffing is ready .Keep aside .

METHOD TO MAKE THE TIKKIS /PATTY

Grease your palms ,take a portion of mashed potato and flatten it .

Place a tbsp of stuffing in the centre .

Bring the edges together and seal it .

Roll it and flatten it into small patties.

See that there are no cracks .

Dust the outer part with corn flour – this helps in less absorption of oil .

Refrigerate these tikkis for minimum 30 mins or more OR We can fry it directly .

Deep fry or shallow fry it till golden and crisp  on both sides .

Serve with any chutney /dip /sauce .

VARIATION.

  1. I have used whole green peas ,you can crush the green peas so that it becomes easy to stuff .
  2. Adjust spice as per taste .Stuffing has to be spicy as the covering is plain .If you want you can add spice in mashed potato also .
  3. You can try same recipe ,instead of green peas use cooked chana dal or any other stuffing of your choice .
  4. These patties can be used for making chaat items like ragda pattice or serve with chole .
