Andhra style brinjal fry in green masala
ANDHRA STYLE BRINJAL FRY IN GREEN MASALA / VANAKAYA KOTHIMEERA KHARAM

INGREDIENTS
- 500 gms Baby Brinjals OR any type
- 1 Cup tightly packed Fresh Coriander
- small Piece of Ginger
- 2 tsp jeera
- 5 to 7 Green Chillies or as per taste
- 1/2 tsp Turmeric Powder
- 3 or 4 tbsp Oil
- A few curry leaves
- Salt to Taste
METHOD
Grind the coriander, ginger , jeera , green chillies together with a little water to form a thick fine paste.
Cut the stems off the brinjals, and cut each brinjal vertically into 4 pieces. Keep in a pan of water to prevent them from blackening due to oxidation.
Heat oil in a pan .
Drain all the water from the brinjals and add the brinjal pieces to the oil.
Add salt and stir-fry for 5 minutes.
Cover and let the brinjal pieces cook for about 5 minutes on high flame .
Add turmeric + salt and mix well.
cover and cook till soft and the colour change.
Add the coriander- paste and mix well till all the brinjal pieces are coated well with the masala .
simmer for 5 mins and off the flame .
Serve hot with steamed rice /roti.
