APRICOT / KHUBANI WITH FRESH CREAM

Apricot with fresh cream

INGREDIENTS

  • Dried apricot – 10 or 12
  • Sugar – 1 cup
  • Water – 2 cup
  • Chilled fresh cream – 1/4 cup
  • Vanilla essence 2 drops OR a pinch of cardamom pwdr
  • Few saffron strands for garnish [optional]

PREPARATION

  1. Wash the dry apricot .
  2. Take 2 cup of water + 1/4 cup of sugar in a pan and keep it to boil.
  3. Once it starts boiling , lower the flame to medium low and add the apricots .
  4. Cook for 12 to 15 mins till the apricots get soft .
  5. Off the flame ,add the vanilla essence /cardamom pwdr  and mix .
  6.  Allow it to cool .
  7. Refrigerate it for few hrs .The apricots have to be in the syrup .
APRICOT / KHUBANI WITH FRESH CREAM

METHOD

Take the fresh cream in a bowl add 2 tbsp of the sugar syrup from the boiled apricot and mix well.

Take few soaked apricots in a small serving bowl .

Top it with  fresh cream .

Garnish with saffron strands and serve chilled .

**You can also soak it in the fresh cream for sometime .

VARIATIONS

You can avoid sugar . Just boil the apricots. While serving top it with fresh cream mixed  with honey .

NOTES

  1. Adjust sugar as per taste.
  2. You can also top it with a scoop of vanilla ice cream .
  3. Same recipe can be tried with dry fig / anjeer.
  4. You can also garnish with finely chopped dry fruits of your choice .
  5. Apricots are a great source of vitamin A ,good for eyesight.
