Apricot with fresh cream
APRICOT / KHUBANI WITH FRESH CREAM

INGREDIENTS
- Dried apricot – 10 or 12
- Sugar – 1 cup
- Water – 2 cup
- Chilled fresh cream – 1/4 cup
- Vanilla essence 2 drops OR a pinch of cardamom pwdr
- Few saffron strands for garnish [optional]
PREPARATION
- Wash the dry apricot .
- Take 2 cup of water + 1/4 cup of sugar in a pan and keep it to boil.
- Once it starts boiling , lower the flame to medium low and add the apricots .
- Cook for 12 to 15 mins till the apricots get soft .
- Off the flame ,add the vanilla essence /cardamom pwdr and mix .
- Allow it to cool .
- Refrigerate it for few hrs .The apricots have to be in the syrup .
METHOD
Take the fresh cream in a bowl add 2 tbsp of the sugar syrup from the boiled apricot and mix well.
Take few soaked apricots in a small serving bowl .
Top it with fresh cream .
Garnish with saffron strands and serve chilled .
**You can also soak it in the fresh cream for sometime .
VARIATIONS
You can avoid sugar . Just boil the apricots. While serving top it with fresh cream mixed with honey .
NOTES
- Adjust sugar as per taste.
- You can also top it with a scoop of vanilla ice cream .
- Same recipe can be tried with dry fig / anjeer.
- You can also garnish with finely chopped dry fruits of your choice .
- Apricots are a great source of vitamin A ,good for eyesight.
