                                                          BOURBON ICECREAM 

Sandwich icecream

INGREDIENTS [ 1 cup – 200 ml ]

  • Whip cream – 1 cup [chilled ]
  • Chilled milk – 1 cup
  • Milkmaid /condensed milk – ½ cup
  • Fresh cream amul – 1 tbsp to enhance the texture [optional ]
  • Vanilla essence – ¾ tsp or 1 tsp
  • Bourbon biscuit – 10 or 12 or as required

PREPARATION

  1. All the ingredients we use , must be chilled .
  2. Separate the cream from the biscuit and keep aside .
  3. Crush the biscuits lightly . [don’t powder it – we want small pieces of biscuits ]

METHOD

Take the chilled cream in a bowl .

Beat the cream till soft peaks are formed and the quantity doubles. [ 3 to 4 minutes ]

Don’t over beat.

Add condensed milk and beat for a minute.

**** HERE – Your base for the ice cream is ready ,after this you can add any flavours / juice / pulp for different types of ice creams.

Add the  biscuit cream + essence + amul fresh cream and again beat for  a minute till it blends together completely.

Add in the crushed biscuits and mix it with a spatula .

Pour it in a freezer safe container and freeze it for more than 6 – 8 hours or overnight.

Once frozen, scoop and serve in a bowl or cone .

Garnish with a piece of biscuit .

VARIATION – same recipe goes for oreo biscuit .

SANDWICH ICE CREAMTake a bourbon biscuit ,remove the cream .

Once the icecream is set ,take a slice of the biscuit shape ,keep it on top of one biscuit and close it with other.

Now wrap it in cling film and put it in the freezer to set again .

NOTES

  1. If you don’t have a beater use a mixie , time required will be less. Quantity will be less compared to beater .
  2. Don’t beat after adding the biscuits ,we need the crunch .
  3. ****Once the basefor the icecream is ready , you can add any flavors / juice / pulp for different types of ice creams – for 1 cup cream you have to add either one cup of juice or pulp .If adding artificial flavours or colours then add 3/4 th or 1 cup of milk / water. Reduce the quantity of water / milk  if you want the ice cream to be like machine made Softys.
  4. Instead of condensed milk we can use powdered sugar as per taste.
  5. Quantity of condensed milk or sugar depends on your taste.
  6. Also check whether the whip cream is sweet . Some whip creams have sugar . I have used RICHS GOLD brand.
  7. You can also use amul whip cream / tropolite.
  8. Don’t over beat the cream else it will crack .
  9. You can chill the beater’s blade and mixing bowl for sometime.
  10. All the ingredients have to be chilled.
