CHEESY MAYO CHICKEN ROAST
Cheesy mayo chicken roast �INGREDIENTS
- Chicken breast – 1 whole
- Mayo – ¼ cup
- Garlic finely minced – 1 tsp OR 1/2 tsp garlic pwdr
- Black pepper pwdr – ½ tsp
- Mixed herbs or oregano – 1 tsp
- Grated cheese – 2 tbsp
- Grated cheese for garnish
- Salt to taste
PREPARATION
- Clean, wash and drain the chicken .
- Pat dry it , there should be no moisture.
- Slit the chicken breast in half length wise to get 2 thin halves [as shown in pic] this reduces the cooking time.
- I have cut the breast into small pieces ,you can use it whole .
METHOD
Take a mixing bowl and add all the other ingredients and mix well.
Spread this mixture all over the chicken .
Arrange the chicken on a baking rack .[ baking in rack helps even baking ]
Also I kept a tray down ,so that if any juice drips down ,falls on the tray.
***Preheat the oven at 200*C convectional mode.
Arrange the baking time for 40 mins.
Bake the chicken for 20 mins.
After 20 mins, flip the chicken using tongs and again cook for 20 mins. [ be careful as the oven is hot ]
Once done ,arrange on serving tray ,sprinkle the grated cheese and serve the juicy creamy baked chicken .
VARIATION FOR ROASTING PAN .If roasting on pan ,then don’t add cheese to the marinade as it can burn fast.
Place the chicken breasts on the pan and fry for 5 – 6 minutes on each side till its cooked or until the chicken breasts are lovely golden brown. You can cover with a lid while cooking . Once done on both sides , remove on absorbent paper. sprinkle loads of cheese on top and serve .
NOTES
- No oil is required .
- While baking ,we can sprinkle bread crumbs all over to get crispy covering .
- I did not add garlic, as I used garlic mayo .
- You can use any mayo .
