Cheesy paneer parcels
CHEESY PANEER PARCELS
INGREDIENTS FOR COVERING
- Maida – 1 cup
- Fine sooji / rava – 1 tsp
- Oil – 1 tbsp
- Salt to taste
METHOD
Mix all ingredients in a big plate .
Slowly add water and start kneading .
Knead it into a firm and stiff dough .
Cover and keep aside for 30 mins .
Divide the dough into big equal portions.
Roll each portion into a smooth ball using your hands .
Now roll each ball into a very thin disc.[ 7 – 8 inches diameter ]
Heat a tava and roast the disc on both sides slightly for 20 or 30 seconds .[ Don’t cook fully ]
Cut these discs into rectangle strips as shown in pics .
INGREDIENTS FOR STUFFING
- Paneer scrambled – 200 gms
- Cheese cubes – 3 grated
- Very finely chopped onions – 2 or 3 tbsp. [optional ]
- Very finely chopped coriander leaves – 1/4 cup or more
- Salt to taste [ add little as we are adding cheese ]
- Finely chopped green chilli – as required [ avoid if making for kids and add pepper pwdr ]
- Mixed herbs / oregano – ½ tsp
- Maida slurry / paste – mix 2 tbsp maida + 2 tbsp water to get a thick paste
PREPARATION OF STUFFING –
Make a mixture of scrambled paneer + grated cheese + onions + coriander leaves + salt + chilli /pepper pwdr +oregano .
METHOD FOR MAKING THE PARCELS .
Take one thin strip and apply the flour paste at the centre .
Now take another strip and keep it over the portion where you applied the paste as shown in the epic.
**** it will look like a plus [ + ] sign.
Now spoon in a tbsp of the paneer stuffing in the centre and flatten it a bit using fingers .
Fold the lower strip above the stuffing and apply some maida paste .
Repeat the process by folding the left and right also .
Finally fold in the top part and seal it with the flour paste .
Fold the strips to form a parcel .
If the corners are open .apply some flour paste to close them .
Once done you can refrigerate these parcels or fry them immediately.
Heat oil in a deep pan for frying .
Once the oil is hot enough ,slidein the parcels .
Fry them on both the sides till crisp and golden .
Remove on absorbent paper .
Serve hot with any dips /sauces or chutneys .
