CRISPY SQUID FRY / CALAMARI  FRY

Squid is eaten in many cuisines; in English, the culinary name calamari is often used for squid dishes. There are many ways to prepare and cook squid. Fried squid is common

Calamari is loaded with nutrients but it’s usually served fried, which adds tons of fat and calories.

How to Clean Calamari

  1. Slice squid in half just below the eyes, separating the tentacles from the head; reserve tentacles.
  2. Holding the body, gently pull out the head, intestines, ink sac, and clear skeleton; discard innards.

  4. Rinse squid body and tentacles before cooking.
  5. Slice into thin rings .

INGREDIENTS

  • Cleaned and chopped squids – 500 grms
  • Oil to deep fry
  • Ginger garlic paste – 2 tsp
  • Chaat masala – ½ tsp
  • Red chilli pwdr – 2 tsp or as per taste
  • Garam masala pwdr – ½ tsp
  • Turmeric – ½ tsp
  • Coriander pwdr – ½ tsp
  • Pepper pwdr – ½ tsp
  • LEMON JUICE – 2 TSP
  • Orange food colour – 1 pinch
  • Salt to atste
  • curry leaves – few
  • Corn flour – 2 tbsp

METHOD

Clean and cut the squid into rings

Take all the ingredients except oil and cornflour  in a bowl and mix well.

Keep aside for 15 mins or more .

Heat oil for deep frying or shallow frying .

Now add corn flour to the marinated squid and mix well .

*We have to add corn flour while frying .

Now slide in few rings at atime and stir fry on medium flame.

It takes less time to cook . [ 4 to 5 mins on medium OR 3 mins on high  ]

Don’t overcook else it will become rubbery .

Remove with slotted spoon on a paper towel.

Serve the calamari immediately as a starters with chutneys and hot sauces of your choice.

NOTES

  1. Adjust masalas as per taste .
  2. Has to be served HOT .

Eat them fresh- Like all shellfish, squid is highly perishable and prone to bacterial contamination. One has to either eat them fresh (same day catch) or store them correctly between at 0-5 degree Celsius.

Clean it properly– Pull the head off, remove the innards and the ink sac of the squid, separate the tentacles, and scrub them thoroughly with clean water before use. The body tube and the tentacles of the squid are edible.
