 EGG BURJI /SCRAMBLED EGG /ANDA BURJI

                                                               INGREDIENTS

  • Egg – 4
  • Milk – 1 tbsp
  • Onion finely chopped – 1 big
  • Jeera – 1/2 tsp [optional ]
  • Finely chopped green chilli  – 1
  • Ginger grated – 1/2 tsp
  • Tomato – 2 small finely chopped
  • Red chilli pwdr – 1 tsp or as per taste
  • Turmeric pwdr – ¼ tsp
  • Coriander pwdr – 1 tsp [ optional ]
  • Garam masala pwdr – 1/2 tsp OR Pav bhaji masala – 11/2 tsp
  • Salt as per taste
  • Oil – 1 tbsp
  • Kasoori methi pwdr – ¼ tsp [ optional ]
  • Finely chopped coriander leaves – 2 tbsp

PREPARATION.

Whisk or blend the eggs + 1 tbsp milk well .Adding milk , gives the burji a moist texture .

METHOD

Heat oil in a pan.

Add onions and fry till translucent.

Add tomatoes and fry till oil separates.

Add chilli pwdr + coriander pwdr + turmeric pwdr + garam masala pwdr + salt and fry till raw smell leaves.

Lower the flame and slowly add the whisked egg , keep stirring while adding.

Cook on low flame by continuously stirring.

Once the eggs are cooked and firm , off the flame.

Sprinkle kasoori methi pwdr + coriander leaves and mix well.

Serve hot with buttered pav , bread or chappati.

VARIATION – this can be used for making egg parathas .

NOTES.

  1. Adjust masalas as per your taste.
  2. I have added pav bhaji masala for more flavour – reduce garam masala pwdr to 1/2 tsp and add 1/2 tsp of pav bhaji masala OR  add 2 tsp pav bhaji masala  .
  3. This can be used as stuffing in samosa, patties, roll, egg paratha etc.
  4. Stirring continuously is important.
  5. The same procedure can be done with chopped boiled eggs ,it taste much better because of the cooked yolk .It has a very smooth texture. – Boiled egg burji
  6. Why not give a twist by adding capsicum + butter and pav bhaji masala.
  7. In the same bhurji you can add cooked rice and have egg fried rice.
  8. With the onions you can also add mushrooms.
  9. You can add curry leaves for more flavour .
