Egg burji recipe
EGG BURJI /SCRAMBLED EGG /ANDA BURJI
INGREDIENTS
- Egg – 4
- Milk – 1 tbsp
- Onion finely chopped – 1 big
- Jeera – 1/2 tsp [optional ]
- Finely chopped green chilli – 1
- Ginger grated – 1/2 tsp
- Tomato – 2 small finely chopped
- Red chilli pwdr – 1 tsp or as per taste
- Turmeric pwdr – ¼ tsp
- Coriander pwdr – 1 tsp [ optional ]
- Garam masala pwdr – 1/2 tsp OR Pav bhaji masala – 11/2 tsp
- Salt as per taste
- Oil – 1 tbsp
- Kasoori methi pwdr – ¼ tsp [ optional ]
- Finely chopped coriander leaves – 2 tbsp
PREPARATION.
Whisk or blend the eggs + 1 tbsp milk well .Adding milk , gives the burji a moist texture .
METHOD
Heat oil in a pan.
Add onions and fry till translucent.
Add tomatoes and fry till oil separates.
Add chilli pwdr + coriander pwdr + turmeric pwdr + garam masala pwdr + salt and fry till raw smell leaves.
Lower the flame and slowly add the whisked egg , keep stirring while adding.
Cook on low flame by continuously stirring.
Once the eggs are cooked and firm , off the flame.
Sprinkle kasoori methi pwdr + coriander leaves and mix well.
Serve hot with buttered pav , bread or chappati.
VARIATION – this can be used for making egg parathas .
NOTES.
- Adjust masalas as per your taste.
- I have added pav bhaji masala for more flavour – reduce garam masala pwdr to 1/2 tsp and add 1/2 tsp of pav bhaji masala OR add 2 tsp pav bhaji masala .
- This can be used as stuffing in samosa, patties, roll, egg paratha etc.
- Stirring continuously is important.
- The same procedure can be done with chopped boiled eggs ,it taste much better because of the cooked yolk .It has a very smooth texture. – Boiled egg burji
- Why not give a twist by adding capsicum + butter and pav bhaji masala.
- In the same bhurji you can add cooked rice and have egg fried rice.
- With the onions you can also add mushrooms.
- You can add curry leaves for more flavour .
