LEFTOVER CHAPATI NOODLES EGG BURJI

INGREDIENTS

  • Small chapatti / phulkas – 4
  • Egg – 4
  • Milk / water– 2 tbsp
  • Oil – 2 tbsp
  • Onion finely chopped or sliced – 1
  • Tomato finely chopped – 2
  • Jeera – 1/2 tsp [optional ]
  • Finely chopped green chilli  – 1
  • Ginger garlic paste – 1 tsp
  • Red chilli pwdr – 1 tsp or as per taste
  • Turmeric pwdr – ¼ tsp
  • Coriander pwdr – 1 tsp [ optional ]
  • Garam masala pwdr – ½ tsp OR Pav bhaji masala – 1 ½  tsp
  • Tomato ketchup – 1 tsp [ optional ]
  • Salt as per taste
  • Finely chopped coriander leaves – 2 tbsp

PREPARATION

  1. Roll all the 4 chapatis together as shown in pic .Now slice it very finely with a sharp knife .[ I sliced it very finely ]
  2. Break the eggs into a bowl , add milk and whisk well and keep aside .

Heat oil in a pan.

add jeera and let it crackle .

Add onions + green chilli and fry till translucent.

Add ginger garlic paste and stir fry till raw smell leaves .

Add tomatoes + salt and fry till oil separates.

Add chilli pwdr + coriander pwdr + turmeric pwdr + garam masala pwdr + salt and fry till raw smell leaves.

add ketchup and give a nice mix .

Lower the flame and slowly add the whisked egg , keep stirring while adding.

Cook on low flame by continuously stirring till the eggs are cooked and firm .

Don’t over cook else it will become very dry .There should be some moisture .

Add the chopped chapatti and mix well till it is coated with the masala .

Once done garnish with coriander leaves and serve hot .

NOTES.

  1. Adjust masalas as per your taste.
  2. I have added pav bhaji masala for more flavour.
  3. Stirring continuously is important.
  4. The same procedure can be done with chopped boiled eggs ,it taste much better because of the cooked yolk .It has a very smooth texture. – Boiled egg burji
  5. Why not give a twist by adding capsicum + butter.
  6. In the same bhurji you can add cooked rice instead of chapatti and have egg fried rice.
  7. With the onions you can also add mushrooms.
  8. You can add curry leaves for more flavour .
