EGGLESS CHOCOLATE PANCAKE

A pancake is a flat cake, often thin and round, prepared from a starch-based batter that may contain eggs, milk and butter and cooked on a hot surface such as a griddle or frying pan, often frying with oil or butter.

Eggless chocolate pancake recipe

INGREDIENTS

  • Maida / APF – 1 cup
  • Cocoa powder – 2 tbsp
  • Sugar pwdr – 3  tbsp
  • Salt – a pinch
  • Milk – 1 cup  + ¼ cup extra if required to make batter
  • Oil or melted butter – 1 tbsp
  • Baking pwdr – ¾ tsp
  • Baking soda – ¼ tsp
  • Vanilla essence – ¼ tsp
  • Butter to drizzle on top while frying the pancakes [ optional ]
  • Honey /chocolate sauce /any syrup / maple syrup / caramel sauce / fresh whip cream to top while serving .

PREPARATION

Sieve together maida + baking pwdr + baking soda + cocoa pwdr twice and keep aside .

METHOD

Take the 1 cup milk + oil / butter + sugar + salt +  vanilla essence in a mixing bowl ,mix it well till sugar dissolves .

Now slowly add the flour mixture  and mix well into a smooth flowing batter .[not very thin ]

Add more milk if required ,the batter consistency should be like idli batter – thick and flowing .

Keep the batter aside for 10 mins.

Heat a nonstick pan on medium flame ,

Once the pan is hot , wipe the pan with a wet cloth .

Now pour a ladle of batter and gently spread it if required.

In few seconds bubbles will appear all over . [ be quick as it browns fast ]

Drizzle little butter if you want .

Flip over and cook on the other side also for few seconds .

Once done remove and serve.

While serving add a dallop of butter + drizzle honey or any toppings of your choice.

VARIATION –

  1. You can use any of the eggless cake recipe where we add curd  + baking pwdr + baking salt and make pancakes .
  2. To reduce baking pwdr we can add 1 tsp vinegar or lime juice to the milk and curdle and then add .

NOTES

  1. This recipe is asking for more baking pwdr as we r not egg .
  2. We can replace maida with wheat flour , texture may be different .
  3. Baking powder has no ill effects ,so don’t worry and go ahead.
  4. You can increase the sugar .
  5. The pan should not be very hot else the edges will be curvy and it will burn fast . That is why we are wiping the pan with wet cloth .
  6. Use same ladle of batter for all pancakes to get same size .
  7. Instead of vanilla essence we can add cinnamon pwdr.
  8. For more fluffiness and the best pancake , add 1 beaten egg and increase the vanilla essence .
  9. We can also add 2 small ripen mashed banana to the same recipe .
  10. You can serve panckes with whipped cream or a scoop of ice cream.
