Eggless date and walnut chocolate cake
EGGLESS DATE AND WALNUT CHOCOLATE CAKE
INGREDIENTS
- Soft dates – 18 nos OR 1 CUP chopped dates
- Hot Milk – 1 cup
- Sugar – ¾ cup
- Oil – ¼ cup
- Curd – ¼ cup at room temperature
- Maida – 1 cup
- Unsweetened cocoa pwdr – 1 tbsp
- Baking soda – 1 tsp
- Chopped walnut – ¼ cup
- Milk – 2 or 3 tbsp extra if batter is thick
PREPARATION
Soak the dates in hot milk for minimum 30 mins.
*If using soft dates ,use directly .
Sieve together maida + baking soda + cocoa pwdr twice .Transfer to a mixing bowl .
Grease and dust the baking tin
METHOD
Take the soaked dates with the milk in mixie jar and blend .
Now add sugar and blend .
Now add curd and oil and blend well .
Add 2 or 3 tbsp milk if the mixture is thick .
Preheat the oven at 180 * C [ convection mode ]
Pour this mixture over the sieved flour and mix .
See that there are no lumps.
Again if you feel the batter is thick you can adjust with 1 or 2 tbsp milk .
The batter has to be of pouring consistency .
*Never overbeat cake batters.
Mix in the walnut .
Pour the batter in the greased tin and tap it gently .
Bake the cake at 180 * C for 35 to 40 mins ,until a toothpick inserted in the centre of the came comes out clean .
Baking time depends on the width of the tin , wider the tin lesser the baking time .
Loaf tin takes more time.
Once done allow it to cool for 10 mins to 15 mins before slicing .
NOTES
You can make without cocoa pwdr also .
