Healthy eggless millets and jaggery cake
HEALTHY EGGLESS MILLETS AND JAGGERY CAKE
INGREDIENTS:-
- Foxtail powder OR ragi powder – 1 1/2 cup
- Wheat flour – 1 1/2 cup
- Coco powder – 1 tbsp unsweetened
- Baking powder – 1 tsp
- Baking soda – 1/2 tsp
- Jaggery powder or cane sugar – 3/4 cup
- Curd at room temperature – 1/2 cup
- Milk – 1/2 cup
- Oil – 1/4 cup
- Vanilla essence – 1/2 tsp
- Dry fruits chopped – 1/4 cup
PREPARATION
- Grease the baking tin .
- Preheat the oven at 180 * C
METHOD
Mix all Foxtail flour + wheat flour + baking powder + coco powder + baking soda and sieve it 2 or 3 times.
Make a wet mixture of jaggery + milk + oil + curd and mix well till the jaggery melts .
Slowly add the flour mixture to the wet mixture and mix with a spatula .
Mix in the dry fruits also .
Pour the batter in the tin and gently tap it .
Bake it for 30 – 40 mins at 180 * C .[ baking time depends on the size of the tin – wider the tine less the baking time ]
Check after 25 mins .
Bake till the tooth pick comes clean .
Allow it to cool .
Run a knife around the edges to loosen the cake .
Remove and slice it .
**** The cake will be dense as we have used wheat flour.
NOTES
- You can take half oil and half melted butter .
- You pour chocolate sauce over it or any chocolate frosting .
- You can use finger millet /ragi also instead of foxtail millet .
- If the batter is thick add few tbsp of milk .
