INSTANT GREEN CHILLI PICKLE

INGREDIENTS
- Green chilli – 100 gm
- Split yellow mustard seeds – 2 tsp
- Fennel seeds – 2 tsp
- Methi seeds – 1 tsp
- Turmeric – ½ tsp
- Asafoetida – a generous pinch
- Vinegar – 5 tsp
- Sesame oil or mustard oil or regular oil .
- Salt to taste
PREPARATION
- Wash the green chillies well.
- Remove the stalk .
- Pat dry it completely and spread under the fan for an hour so that there is no moisture.
- Slice it into 2 .
- Roast the fennel seeds and methi dana separately till aromatic. Don’t burn it. Once it cools grind it .
METHOD
Take oil in a pan /kadai and heat it till very hot.
Off the flame.
When the oil cools down to little hot temperature, add asafoetida + turmeric + salt + green chilli and mix well.
Cover and keep aside for 2 or 3 minutes.
Now add the split mustard seeds + fennel seeds and fenugreek seeds pwdr and mix well.
When the mixture cools down completely add the vinegar and mix well.
Store in a sterilized glass bottle and use upto 3 mnths.
