Lehsuni palak
LEHSUNI PALAK / GARLIC SPINACH
INGREDIENTS
- Palak / spinach – 1 medium bunch
- onion very finely chopped- 1
- tomato very finely chopped – 1
- finely minced garlic – 3 tbsp.
- finely minced ginger – 1 tbsp
- crushed garlic – 1 tbsp
- green chilli finely chopped – 2 or as per taste
- jeera – 1 tsp
- kasoori methi pwdr – 1 tsp
- coriander pwdr – 1 ½ tsp
- garam masala pwdr – ½ tsp
- sugar – ½ tsp [optional ]
- oil – 1 tbsp
- oil + butter / ghee – 1 tbsp
- whole red chilli chopped – 2
- fresh cream – 1 or tbsp.
PREPARATION
- Clean ,wash and rinse the palak leaves .Soak in water for few minutes for soil partices to loosen .Once again rinse and drain the water .Keep it a colander for excess water to drain.
- Boil it for 4 to 5 mins. Drain the excess water and allow it to cool .Once cooled blend it into a smooth puree.
METHOD
Heat oil in a pan ,add jeera and let it splutter.
Add finely chopped ginger and garlic .
Stir fry for a minute .[colour should not change ]
Add onions + green chilli and fry till light brown.
Add tomato + salt and fry till oil separates
Add coriander pwdr + garam masala pwdr + sugar and fry .
Add the palak puree and mix well .
Stir fry for 2 or 3 minutes .
Add kasoori methi pwdr and mix well.
Add fresh cream and mix well .
Off the flame .
In another small pan heat oil + ghee / butter .
Add crushed garlic + chopped red chilli and stir fry till garlic becomes golden and aromatic .
Pour this over the palak .
Lehsuni / garlic palak is ready to be se served .
Goes well with any Indian bread / basmati rice .
