#महाराष्ट्राचे पंचपक्वान्न MAHARASHTRIAN CUISINE – 10 [ kadve valache bhirde / rice bhakri / papad cha khuda ]
Basically a Konkani Dish. It’s made either in red Konkani masala or in green chilli paste, goda masala. Today we will make it in green Chilli paste. Bhirade is served with easy method of Rice bhakri, PAPADACHA KHUDA which is dry chutney of roasted papad and Rice Kheer.
KADVE VALACHE BHIRADE🍛
••INGREDIENTS••
1 cup Kadve Vaal / Bitter Field beans, soaked in warm water for 7-8 hours
2 sliced Onions
8-9 cloves Garlic
½ inch Ginger
6-8 Green Chillies
¼ cup fresh grated Coconut
½ tsp Turmeric Powder
1 tsp Goda Masala
1 small lemon sized Tamarind soaked in warm water.
2 tsp Jaggery/ Gur
Salt to taste
3 tbsp of oil
••METHOD••
Wash soaked Beans in warm water 2-3 times. Rub beans in between both the palms and remove the outer skin / layer of the Beans.
Separate the inner white part and outer brownish layer.

Boil 2 cups of water in a pan. Add cleaned beans and little salt to it. Boil until beans are cooked. Don’t over cook.
Heat 1 tsp oil in a pan add garlic, ginger, green chillies and onions. Saute until onions are slightly pink.
Remove from the pan and grind them into fine Paste by adding little water. Keep it aside.
Grind coconut, soaked tamarind along with water and jaggery. Keep this paste also aside.
Heat remaining oil. Add Onion Paste until fragrant. Add turmeric powder, Goda Masala and cook for 1 min. Add coconut paste and cook for 3-4mins.
Add boiled beans and salt. Mix nicely, add water if required.
Roll boil and simmer the flame. Cover and cook for 3-5mins.
Serve hot with Rice Bhakri.
🍪RICE BHAKRI
••INGREDIENTS••
1 cup Rice flour
Salt to taste
Warm water to knead the dough
••METHOD••
Take flour in mixing bowl. Add salt.
Mix nicely. Add warm water and knead it nicely with the palm. Nicely kneaded dough is essential for soft and puffed Bhakri.
Now make 4 equal portions of the dough.
Take one portion of the dough and flatten with the help of fingers.
Heat the griddle/ tawa. Bake the bhakri from both the sides.
Similarly bake all the bhakris.
🍪Rice Bhakri in Konkan actually made by steamed rice flour but here it’s another style.
PAPAD CHA KHUDA🍕
••INGREDIENTS••
4-5 roasted papad
4-5 garlic cloves
1 tbsp red chilli powder
Salt
2-3 tsp oil
••METHOD••
Crumble the papad into very small pieces.
Grind garlic, red chilli powder and salt. Mix nicely with crumbled Papad. Heat oil in a pan add crumbled mix and stir fry on low medium flame for 2-3 mins.
