AMRAKHAND / DAL GANDORI/दाल गंडोरी /JOWAR BHAKRI

Dal Gandori (Malegaon special)🍵, Jowar bhakri🍪, Amrakhand🍶Served with Salad🍱 and Kokum Sharbat 🍹

#Dal Gandori is made by Toor dal/split pigeon peas and Green Sorrel which is called आम्बट चूका in Marathi, is a sour and spicy preparation served with Jowar Bhakri…This dal is very famous in Manmad and Malegaon region… so get, set, go for one more Maharashtrian dish… ..

DAL GANDORI/दाल गंडोरी 🍵
••INGREDIENTS••
250 gms Green Sorrel /आम्बट चूक्याची भाजी
(plz check pic of this leafy vegetable on google )
⅓ cup Toor dal/split pigeon peas soaked for ½ an hour
6-8 chopped green chillies ( adjust according to taste)
3-4 green tomatoes washed and fine chopped
Salt to taste
2 tbsp oil
½ tsp mustard seeds
½ tsp cumin seeds
1 fine chopped onion
2 tbsp ginger garlic paste
2 tbsp groundnut powder
½ tsp turmeric powder
2 tbsp fresh grated coconut

••METHOD••
Clean and wash and chop the Green Sorrel with stems. Just discard the hard, lower part of the stem.
In a pressure cooker add 1,½ cups of water.
Add Green Sorrel, toor dal, green chillies, Tomatoes and salt.
Cook the dal for 2-3 whistles. Allow to cool. Open the lid. And smash the dal with wooden blender. (Don’t use electric blender)

In a wok, heat oil. Add mustard seeds and cumin. When crackle, add chopped onions and cook until slightly pink on medium flame.
Add ginger garlic paste cook for few minutes.
Add groundnut powder and turmeric powder.
Transfer the smashed dal over the fragrant tadka and mix well. Let it roll boil for 2-3 mins then keep on low flame for 2-3 mins.
Garnish with grated coconut and serve hot with Jowar Bhakri.

JOWAR BHAKRI🔶🔶
••INGREDIENTS••
1 cup Jowar flour
Salt to taste
Warm water to knead the dough

••METHOD••
Take flour in mixing bowl. Add salt.
Mix nicely.
Add warm water and knead it nicely with the palm. Nicely kneaded dough is essential for soft and puffed Bhakri.
Now make 4 equal portions of the dough.
Take one portion of the dough and flatten with the help of fingers.
Make round disc.
Heat the griddle/ tawa. Bake the bhakri from both the sides.

AMRAKHAND🍶🍶

••INGREDIENTS••
½ litre full fat milk
½ cup milk powder
1 tsp curd
¼ Sugar powdered
1 mango pureed

•METHOD••
Warm the milk, don’t overheat. Add milk powder and curd to it. Cover and allow to set for 5-6 hrs. When curd is set, tie up in a muslin cloth and hang it for 6-8 hrs.
Remove hung curd in a bowl. Whisk it nicely.
Add sugar and mix.
Add mango puree and mix. Keep it in refrigerator.
Serve chilled.
