Makhana / lotus seeds chikki / bar
MAKHANA / LOTUS SEEDS CHIKKI / BAR

Phool Makhana, Fox Nuts or Lotus Seeds are loaded with nutrients and are a good source of protein, calcium, and iron.
INGREDIENTS
- Makhana – 1 cup
- Finely chopped pista – 1 tbsp
- Sugar – ¼ cup
- Rose essence – ¼ tsp
- Ghee – ½ tsp
PREPARATION
- Dry roast the makhana on low flame till crisp.
- Colour should not change .
METHOD
Heat a heavy bottom pan with sugar + ghee.
Cook on medium flame till it gets lightly caramelised .
Colour should not change much .
Off the flame ,add the essence and mix.
Immediately add the makhana + pista and mix well ,till they are coated well with the sugar .Take a spoonful and fill the greased moulds .
Spread the hot mixture on a greased plate or tin
Press it gently to level it from all sides .
Give cuts as per the size or shape you want .
Allow the chikkis to cool .
IMP TIP – As the mixture thickens / hardens fast ,you can keep it over simmering hot water , to maintain the temperature of the mixture .
Always make chikkis in less quantity .
