MEETHA PAN RECIPE

Paan is a preparation combining betel leaf with areca nut widely consumed throughout Southeast Asia, South Asia and East Asia. It is chewed for its stimulant effects. After chewing, it is either spat out or swallowed. Paan has many variations. Slaked lime paste is commonly added to bind the leaves.

Some preparations in the Indian subcontinent include katha paste or mukhwas to freshen the breath.

magahi  paan is an expensive variety of betel which is grown in Aurangabad, Gaya and Nalanda districts of central bihar . It is non-fibrous, sweeter, tastier and the softest of the lot

MEETHA PAN RECIPE

INGREDIENTS

·         Betel leves / paan  – 4

·         Edible chuna / lime / calcium carbonate – ½ tsp

·         Betel nuts / katri supari – 1 tsp [optional ]

·         Gulkand – 3 or 4 tsp

·         Catechu / katha pwdr or diluted – 1 tsp

·         Sweet paan mixture or chutney -2 tsp

·         Fennels seeds / saunf / mukhwas – 2 tsp [plain or sugar coated ]

·         Elaichi / cardamom – 4 nos

·         Tuitti fruit- 2tsp

·         Desiccated coconut – 2 tsp

·         Glazed Cherry – 4

·         Tooth pick – 4 to pin up the pan fold

METHOD

Wash and pat dry the paan leaves.

Chop of the stalk .

We have to add the ingredients on the back side of the paan .

Apply chuna paste all over ,very less .[ don’t apply more it will burn the tongue ]

Now apply the katha all over ,again less .

Now spread the paan chutney .

Add the gulkand .

Now top other ingredients one by one .

Don’t stuff too much ,we will not be able to fold .

Close / wrap  the stuffed pan in a triangle cube shape and final insert a toothpick with cherry .

Serve chilled after meals

NOTES

1.    Betel leaf is a mouth refreshener .It kills bacteria. It has cooling properties .It regulates digestive juices and aids digestion .

2.    All the ingredients are easily available with the paan bedi shop.If you want in bulk ,you can ask the shop keeper for wholesaler .

3.    Ingredients can be adjusted as per taste .

4.    We get different flavoured chutneys also .

5.    You can refrigerate the paan and use it later .

6.    We also get chocolate paan .

7.    Regular paans have tobacco in it .

8.    Having regular sweet paan is ok for health , it is bad to have it with tobacco and also not good to get addicted to it
