Pineapple ladoo

INGREDIENTS
• Pineapple – 1 medium size without skin
• Desiccated coconut – 1/2 cup + 1/4 cup for rolling
• Sugar powder – 1/4 cup or as per taste or depends on the sweetness of the fruit
• Ghee – 1 tsp [ optional – I did not add ]
• Cardamom pwdr – 1/4 tsp [optional ]

PREPARATION
1. Grate the pineapple .
2. Spread 1/4 cup desiccated coconut in a plate for rolling the ladoos .

METHOD
Heat a pan and add the grated pineapple and cook till most of the moisture evaporates .
Lower the flame and add desiccated coconut + sugar + ghee + cardamom pwdr and mix well .
Cook for 3 – 4 minutes ,till the sugar melts and the mixture thickens.
Off the flame .
Once you are able to handle the mixture ,start rolling it into small balls with greased hands .
Roll it over desiccated coconut and keep aside .
Repeat the process with all the mixture .
Store these ladoos in airtight container .
Ladoos are ready to serve .

NOTES
1. You can also add 1/2 cup milk pwdr .
2. Y not add roasted dry fruits .
3. Instead of grating you can blend the pineapple pieces .
4. **You can dip these ladoos in melted chocolate and your chocolate pineapple balls are ready.
5. If the mixture is loose add milk pwdr .
6. Shelf life 2 – 3 days .
7. Instead of sugar we can use milkmaid.
8. Adjust sugar as per taste .
