Rajasthani khoba roti
KHOBA ROTI /JADI ROTI / BISCUIT ROTI – RAJASTHANI RECIPE

INGREDIENTS
- Wheat flour – 3 cup
- Oil – 3 tbsp
- Salt to taste
- Ajwain – 1 tsp
- Water to knead.
- Ghee to drizzle while serving
METHOD
Take flour + oil + + ajwain + salt and mix well with clean hands .
Slowly add water and knead it into a stiff / tight dough .
Taka big portion of the dough .[bigger than regular chapatis ]
Roll it into smooth balls .
Roll it into thick rotis of 1/2 cm thickness.
Prick one side of the roti with a fork so that it doesn’t puff up .
Heat a tava ,place the roti on the tava with the pricked side facing down .
Cook for 2 minutes on low flame.
Flip and cook on the other side for 1 minute.[low flame ]
Again flip and make impressions by pressing with thumb and fingers in a circular motion .[ see the video ]
Again flip and cook on low flame for 4 – 5 mins till golden colour .[don’t burn it ]
Cook on the other side also till golden and brown spots appear all over , by pressing with a muslin cloth .
You can also roast over direct flame like we do for phulkas.
Remove and drizzle ghee generously .
Serve hot with any side dish .
*****In the dough you can add jeera or kasoori methi or any spice of your choice for extra flavour .
