How to cook basmati rice by draining method

Rice cooked in boiled & drain method, tends to be more fluffy and gives a visual impression of more cooked rice compared to cooking the same quantity in absorption method. This leads to people eating less quantity of rice when cooked in boil & drain method.

Same method is used in our house for cooking regular rice like kolam .Regular rice need not be soaked .Just wash and add to boiling water.

How to cook basmati rice by draining method

INGREDIENTS

  • Basmati rice of good quality [ aged ] – 1 cup
  • Water – 6 cup
  • Salt – 1 ½ tsp

PREAPARATION

Clean ,wash ,rinse  in 2 or 3 water till water runs clear and soak the rice for 30 mins .

Always wash the rice before soaking, after soaking if you wash they will break .

METHOD

Boil 6 cups of water .

Once the water starts boiling add the rice and give a mix .

Add salt

Now cook on medium flame till the rice is done.

Don’t keep on stirring .

Check after 5 or 6 mins by pressing the rice .

NOTE – you need to be attentive while cooing rice else, you end up in mushy sticky rice.

It takes 10 – 12 mins to cook depending on the quality of rice and soaking time.

The rice should be fully cooked , soft and grainy in texture.

Drain the water as shown in the video below.

Keep it for  5 to 6 mins ,so that complete water is drained.

Don’t open immediately , let it sit for 5 mins.

Open the lid and fluff the rice .

Rice is ready to be served with any gravy .

FOR DUM BIRYANI-  We need to boil the water with whole garam masalas. Add pandan leaves for more flavour. After the boil we need to cook just for 5 mins. Water is drained through a strainer . For biryani we can add upto 2 tsp of salt as water is drained  .

FOR FRIED RICE / PULAO / STIR FRY –Cooking basmati rice perfectly is the key to any good fried rice or pulao

The rice has to be cooked till soft . Adding a teaspoon of oil /ghee to boiling water helps to keep the grains separates .Drain water immediately and spread the rice it in a plate and let it cool down. Then fluff it up. For chinese fried rice you can refrigerate the cooked rice for sometimes .

FOR PARBOILED RICE [UKDA CHAWAL IN HINDI] –We need to soak for 30 mins .Water quantity will be 1 : 6

  1. One good fistful of rice serves per person.
  2. Soaking yields softer rice and gives perfect grain separated rice.
  3. While washing the rice , do rub it with fingers ,
  4. Different rice varieties have different cooking times,
  5. Brown basmati rice takes longer to cook and needs more water. Follow instructions on the packet.
  6. One soft ‘grit’ is felt when a grain is pressed between finger
  7. Before adding soaked rice to boiling water , drain off all the water.
  8. You can flavour the water with stock, salt, saffron, cardamoms and even herbs.
  9. Always wash the rice before soaking, after soaking if you wash they will break .
  10. Basmati rice needs a minimum soaking time for 30 minutes
  11. Addition of lemon juice gives you the rice white in color
