INSTANT PEANUT RICE

INGREDIENTS

  • Cooked rice / leftover rice – 2 cup
  • Roasted skinless peanut – ½ cup
  • Red chilli pwdr – 1 tsp or as per taste
  • Salt
  • Oil / ghee – 11/2 tbsp
  • Mustard seeds + urad dal – 1 tsp
  • Curry leaves – few
  • Finely chopped coriander leaves to serve .

METHOD

Take peanut + red chilli pwdr in mixie jar and pulse beat into coarse pwdr .[ not very coarse and not very fine ]

Add the peanut pwdr to the rice and mix well.

Adjust salt as per taste.

Heat oil in a pan .

Add mustard seeds + urad dal and let it crackle.

Add the curry leaves and give a mix.

Add the rice and give a nice mix.

Stir and cook for 1 min and off the flame .

Finally garnish with coriander leaves .

NOTES

  1. For variation , why not add 1 tsp sambar pwdr while blending the peanut.
  2. Also while blending we can add 1 or 2 garlic .
  3. This tasted very much similar to metkut rice.
