JOWAR PARATHA / SINDHI JUAR JO DODO

Juar Jo Dodo is a Sindhi style rustic bread made with sorghum or Jowar flour. It’s an easy dish to make and you can serve this for breakfast with just pickle.
The Jowar Jo Dodo dough can be loaded with fresh greens like green garlic / green onion / methi leaves / coriander leaves.
We use fresh coriander and green chilies to spice up this roti. Fresh green garlic is the highlight of this paratha.the fragrance of fresh green garlic is mind blowing .
INGREDIENTS

METHOD [ 1 cup flour for 1 paratha ]
Grind the garlic leaves coarsely .
In a wide bowl, take all the ingredients with 1 tbsp ghee .
Gradually add hot water to the mixture .
Mix using a spoon until it mixes well.
Then carefully knead to a semi soft dough .
*Be careful while adding water to make the dough as onion will leave it’s water ,which will make the dough sticky and difficult to handle.
Heat a tawa.
Take a portion of the dough and roll into a ball .
Pat well either directly on the tava or on a surface /plastic sheet as shown in the video into thin parathas .
*There are many ways to pat it down like you can use a muslin cloth or a plastic sheet to pat it down and transfer to the hot tawa. Or you can pat it down directly on hot tawa. You got to be very careful as you got to be very quick to pat it down.Then carefully place this on the hot tawa .
Sprinkle the oil over the roti and cook over medium flame for the roti to get cooked well.
Flip it over to the other side and cook well.
Serve with pickle and curds.

Juar Jo Dodo is a Traditional Sindhi Breakfast eaten with a bowl of tidalli dal , fried brinjal , buttermilk ,mango pickle and a dollop of home-made white butter.
