Kathiawadi guvar dhokli nu shaak

 Guvar Dhokli / Cluster Beans and Flour Dumpling Curry is a traditional Gujarati dish.  It is very famous sabji of gujarat, kathiyawadi guvar dhokli nu shak.tangy,spicy,sweet and absolutely delicious sabji of kathiyawad,gujarat. Tasty dhokli of besan makes it different.

It is very easy to make and delicious to eat. Guvar dhokli sabji is served with roti,bhakhri , puri or khichadi.

Kathiawadi guvar dhokli nu shaak

INGREDIENTS

  • Cluster beans – 250 grms
  • Besan – 6 tbsp
  • Wheat flour – 2 tbsp
  • Ajwain / carom seeds – ½ tsp + ½ tsp
  • Sesame seeds – ½ tsp
  • Chilli pwdr –1/2 tsp
  • Turmeric – ¼ tsp
  • Sugar pwdr – ½ tsp
  • Kasoori methi crushed – ½ tsp
  • Lemon juice – 1 tsp
  • Baking soda – 1/8 tsp [ a pinch ]
  • Garlic – 8
  • Coriander pwdr – ½ tsp
  • Jeera pwdr – ½ tsp
  • Kashmiri chilli pwdr – 3 tsp
  • Oil – 2 tbsp + ½ tsp
  • Asafoetida – 1/8 tsp + ½ tsp
  • Curry leaves – few
  • Tomato chopped – 2 small
  • Jaggery – 11/2 tsp
  • Salt

PREPARATION

  1. Clean , wash and string the beans . Chop each into 2 or 3 if they are long ..
  2. Take besan + wheat flour + sesame seeds + ajwain + lemon juice + salt + sugar +chilli pwdr + turmeric + kasoori methi + oil + baking soda and mix well.
  3. Now gradually add water and knead into soft dough . Divide the dough into marble size portion .
  4. Roll each portion into smooth balls and flatten it . Cover and keep aside .
  5. Take garlic + Kashmiri chilli pwdr + coriander pwdr and grind it without adding water .Keep aside.

METHOD

Heat oil in a pan .add asafoetida + ajwain and stir.

Add curry leaves.

Add the gavar and mix well .

Add turmeric + salt

Stir fry for a min.

Add the ground paste and mix well .

Stir fry for a min .

Cover and cook for 5 mins.stir in between .

Add 1 cup water and ix well.

Allow it to boil.

Once it starts boiling add the dhoklis one by one and give a gentle stir.

Cover and cook for 5 mins .stir in between.

Add the tomatoes and mix well .

Add the jaggery and mix

Cook till the dhoklis are done .

Check if the dhokli is cooked .

Once done off the flame and garnish with coriander leaves.

Guvar dhokli sabji is served with roti,bhakhri ,puri or khichadi.
