 KHUS KHUS KA HALWA / SINDHI SPECIAL KHASKHAS JO SEERO / POPPY SEED DESSERT

Khus Khus or poppy seeds are often used in Indian cuisine for making delicious curries and since it is nutritionally rich, it is also used in making breads, cakes, cookies, pastries and sweets. Khus Khus halwa is an Indian dessert made on various occasions and festivals like DiwaIi, Raksha bandhan, etc.The milk and khus khus when cooked together imparts a unique and naturally sweet taste to the dish.

KhusKhus is an oilseed obtained from the poppy flower. Poppy seeds (KhusKhus) have strong anti-inflammatory ability, and thus actively used in Ayurvedic preparations for treating inflammation. This magical seed treats sleep disorders like insomnia. If insomnia occurs due to emotional issues such as anger or distress, these can also be treated with Khus Khus. It scores high on several accounts like dietary fiber, minerals (calcium and iron), vitamins, and omega-6 fatty acids.

INGREDIENTS

  • Khus khus / poppy seeds – 6 tbsp
  • Sugar – 6 or 8 tbsp
  • Boiled full fat milk – 5 1/2  cup
  • Ghee  – ¼ cup
  • Cardamom pwdr – ½ tsp
  • Mixed dry fruits –  dry dates – 100grms + almonds  1/4 cup + cashew  1/4 cup + walnuts – 1/4 cup

PREPARATION

  1. Clean the poppy seeds by picking any tiny sand particles .
  2. Clean / wash / rinse /cover  and soak in enough water for 5 to 6 hrs
  3. grind together dried dates + walnut
  4. finely chop almonds and cashew

METHOD

Transfer the soaked khus khus through a strainer .drain out all the water .

Once all the water drains out , transfer the poppy seeds to a mixie jar .

Add 3 or 4 tbsp milk  and grind to a coarse mixture .

Heat a heavy bottom pan with ghee

Add the khus khus mixture and give a stir.

Be careful it will splutter .

Cook on medium flame .

Stir continously and  cook till the khus khus changes its colour lightly and becomes aromatic .

The mixture will reduce and become dry .

Also the colour will change .

Gradually add the milk little by little and keep stirring .

Add walnuts and date Powdr and mix

Lower the flame ,cover and cook

The mixture will thicken as milk evaporates .

Add sugar + cardamom pwdr + almonds + cashews and  mix .

Cook till the mixture starts leaving the pan and forms a lump .

Off the flame and garnish with pistas.

I have made it little dry , you can make it in soft flowing consistency .

VARIATION IN COOKING METHOD  – you can just boil milk and add all ingredients one by one and cook .

NOTE –You can store this halwa in room temperature for about a week. Just heat it up before you serve to have it hot / warm, the ghee will also melt.
