QUICK AND EASY MOONG DAL HALWA

Moong Dal Halwa is a classic recipe that is relished throughout Rajasthan. It is a popular Indian sweet often served in parties. It is super tasty and is often prepared during the winter months, as it is supposed to keep the body warm. Made with Mung beans, ghee and dry fruits, this dessert is very common in the States of Uttar Pradesh and Rajasthan. It is considered to be auspicious for Holi and Diwali and on weddings occassions.
It takes a long time and lots of patience to prepare this halwa and requires a little extra ghee too. The more we sauté moong dal, the more delicious will be the Halwa. You can make a larger quantity of this recipe and store it refrigerated for several weeks. Just add a little milk to the halwa before reheating it. This rich moong dal preparation is garnished with raisins and chopped nuts.

METHOD
Rinse and wash the moong dal .
Soak moong dal in 1 cup milk for 1 hour.
Now grind dal coarsely in the mixer with the milk in which it was soaked .
Transfer to a steaming tin which can be placed in a cooker .
Add 1 tbsp melted ghee in the moong dal paste and mix well.
Keep the tin inside the cooker with enough water .
Pressure cook it upto 3 whistles
Check it with the knife and if it comes out clean, it is ready.
Let it cool completely.
Crumble it and grind in the mixer.
The mixture will be of sooji / rava texture
Heat cup 1 cup ghee in a non stick pan and add the moong dal mixture.
Stir and fry on medium flame till golden in colour 12 – 15 mins
Add sugar + khoya + cardamom pwdr and mix .
Cover and cook on low flame for 2 – 3 mins .stir in between .
Roast ¼ cup chopped dry fruits [ badam / pista /cashew ] in 1 tsp ghee and add to the halwa and mix.
Halwa is ready to serve .
