RIDGE GOURD EGG PORIYAL / TURAI ANDE KI SABJI

Ridge gourd egg poriyal / turai ande ki sabji

INGREDIENTS

  • Ridge gourd – ½ kg
  • Egg – 2 or 3
  • Oil – 1 tbsp
  • Mustard seeds – ½ tsp
  • Jeera – ½ tsp
  • Urad dal – ½ tsp
  • Onion chopped – 1
  • Green chilli chopped – 2 or 3 or as per taste
  • Curry leaves – few
  • Freshly grated coconut – ¼ cup

METHOD

Peel the ridge gourd and chop into small cubes.

Heat oil in a pan .

Add mustard seeds + jeera +  urad dal   and let it crackle .

Add onion + curry leaves + green chilli .

Add chopped turai, mix well and stir fry for a minute .

Sprinkle  2 or 3 tbsp water ,cover and cook till soft .

Give a stir in between .

  • Don’t over cook the vege ,it has to retain shape .

Add salt and  give a mix .

Shift the cooked veges to the edge of the pan .

Break the eggs in the centre and keep stirring .

Stir and cook till the egg is completely cooked .

Lastly add the grated coconut  ,give a mix and off the flame .

Serve with rice + dal / sambar + any accompaniments .
