SIMPLE KIDNEY BEAN SALAD / RAJMA SALAD RECIPE

Bean salad is a common cold salad composed of various cooked beans – green beans, yellow wax beans, garbanzo beanskidney beans – and typically fresh raw onions, peppers, and/or other vegetables, tossed in a vinaigrette or vinegar and characteristically sweetened with sugar. It can also be prepared as a pickled dish.

Eating legumes four times a week or more, compared to less than once a week, confers a 22 percent lower risk of coronary heart disease. Research also shows that legumes lower blood pressure and that a single serving of beans a day can reduce LDL (bad) cholesterol by 5 percent.

Simple kidney beans / rajma salad

INGREDIENTS

  • Boiled rajma – 1 cup
  • Onion very finely chopped – ¼ cup
  • Capsicum finely chopped – 2 tbsp
  • Tomato finely chopped – ¼ cup
  • Finely chopped mint or coriander leaves – 2 tbsp
  • Finely minced chopped garlic – 1 tbsp
  • Lemon juice – 2 or 3 tsp
  • Honey – 2 tsp
  • Pepper pwdr – ½ tsp or as per taste
  • Olive oil – 2 tbsp
  • salt

METHOD

Soak roughly ½  cup rajma for 8 hrs or overnight .

Next day pressure cook on medium flame upto first whistle , lower the flame to lowest .

Cook on lowest flame flame for 12 mins.

Drain ,rinse and and keep aside .

In a bowl take all the ingredients one by one and mix well .

Add the cooked rajma and mix well.

Serve chilled or at room temperature.

NOTES

  1. For crunch we can add roasted peanuts
  2. We can take a combo of corn + beans .
  3. You can use canned beans to make this salad. Just make sure to drain and rinse them before using them.
  4. Try same recipe with white chick pea / kabuli channa / black channa .
