SNAKE GOURD PORIYAL WITH CHANA DAL / SNAKE GOURD STIR FRIED WITH CHANA DAL

Snake gourd poriyal with chana dal

INGREDIENTS

  • Snake gourd – 250 gms
  • Chana dal – ¼ cup
  • Oil – 1  tbsp.
  • Mustard seeds – ½  tsp
  • Urad dal – ½ tsp
  • Onion finely chopped – 1
  • Green chilly chopped – 2 or 3 or as per taste
  • Curry leaves – few
  • Sugar –  a generous pinch
  • Salt as per taste
  • Freshly grated coconut for garnish – ¼ cup .

PREPARATION .

  1. Scrape the outer whitish covering of the snake gourd using the knife . Cut it vertically into 2 and discard the white pulpy portion of seeds . Chop into small pieces .
  2. Soak the chana dal for min 1 hr or more .
  3. cook it with little salt till soft . Don’t over cook it .

METHOD

Heat oil in a pan and add the mustard seeds + urad dal , allow it to crackle.

Add onion + curry leaves + chilli and fry till translucent. [ don’t brown ]

Now add the snake gourd ,and mix well .

Stir fry for 2 mins .

Drizzle 3 to 4 tbsp water all over and give a mix .

Cover partly and cook till the gourd gets cooked.[ 10 to 12 mins ]

Stir in between .

Don’t overcook , it should have the crunch .

Remove the lid  , mix well and add the cooked dal

Mix well ,stir cook for a min .

Once done  [ complete water evaporates and you see oil ] , mix in the coconut and off the flame.

You don’t have to cook after adding coconut .

Serve as a side dish for rice or chappati.

NOTES.

  1. Don’t over cook the dal , it has to be whole and soft.
  2. You can avoid dal and make without it.
  3. Instead of chana dal you can add 1 tbsp of moong dal. [ no need of soaking ]
  4. You can pressure cook the chana dal and add it.
  5. I like to chop the vegetables into small pieces as it cooks fast and kids don’t make any fuss.
  6. Many veges like cabbage , tendli , beans etc can be made in same process with chana dal.
  7. Instead of green chilli ,you can use red chilli.
  8. Instead of adding water , you can put the water on top of the lid , cover and then cook.
