SOOJI ALOO BITES

INGREDIENTS
NOTE –
METHOD
Heat 1 tsp oil in a non stick pan .
Add garlic and stir fry for few seconds , colour should not change much
Add water + chilli flakes + salt + seasoning + pepper pwdr and let it come to a boil .
Gradually add the sooji by stirring continuously .
Once the water is completely absorbed ,off the flame.
Stir well till the mixture starts leaving the sides of pan .
Allow it to come to room temoertaure .
Add the mashed aloo – [ see that there are no lumps ]
Add besan also .
Mix well with clean hands .
Adjust salt and seasoning if required .
Knead it into a smooth dough .
Roll it into cylindrical shape and slice into small bite size .
Arrange it on a plate and let it dry at room temperature for 10 mins.
Heat oil for deep frying.
Once the oil is very hot ,gently slide in the bites.
Stir and fry till golden and crisp from all sides .
Serve hot with any dips / sauces / chutney .
