Stuffed brinjal pakoda

Stuffed vegetables are often good in taste. Many people do not eat brinjal, but Stuffed Brinjals are liked by them.

INGREDIENTS

  • 1/4 kg small brinjals
  • Turmeric – ½ tsp
  • Salt
  • Onions finely chopped – 3
  • Garlic – 6
  • Ginger – a small piece
  • Green chilli – 2 or 3
  • Chilli pwdr – ½ tsp or as per taste
  • Besan – 1 cup
  • Carom seeds / ajwain – ¼ tsp
  • Oil – 1 tbsp
  • Oil to deep fry

METHOD  

Take 1/4 kg small brinjals, make slits like this.
Make sure that there are no worms
I a pan add adequate water,salt and 1/4 teaspoon haldi and keep it for boiling.
Insert a knife in a brinjal and check whether it is cooked, drain off excess water and let it cool completely.
For stuffing take 3 chopped onions,6-7 cloves of garlic, small piece of ginger and 2 -3 green chillies. In a mixer jar grind it into a paste.
In another pan heat 1 or 2 tablespoons oil and add the paste fry a little and add salt to taste and 1/4 teaspoon haldi.
Cook until brown, add 1/4 teaspoon chilly powder, mix well and off the flame.
Stuff the masala in brinjals and keep aside.
In a bowl add 1 cup gram flour,1/4 teaspoon carrom seeds, 1/2 teaspoon salt and 1/4 teaspoon chilly powder, add water little by little and make a smooth batter, beat the batter well to make the pakodas fluffy and light.
In the batter add 1 tablespoon hot oil and again beat well.

Heat oil in a pan and add stuffed brinjals dipped in batter to the oil,fry on medium flame until golden brown.

Drain excess oil and keep it on kitchen paper napkin. Serve hot with chutney of your choice

Serve piping hot baingan pakoras with green coriander chutney or tomato sauce and relish eating.

Note – use any stuffing of your choice .
