STUFFED DAL DHOKLI

Dal dhokli, varan phal, or chakolya is a Rajasthani, Gujarati and Maharashtrian dish made by boiling thick wheat flour noodles in a pigeon pea stew.

Dal dhokli, varan phal, or chakolya is a Rajasthani, Gujarati and Maharashtrian dish made by boiling thick wheat flour noodles in a pigeon pea stew.

Dal Dhokli is an all-time favourite dish made in Maharashtra and Gujarat.  I is a traditional gujarati one pot meal recipe made with toor dal and wheat dough .

Stuffed Dal Dhokli is made by stuffing dhokli with spicy potato filling. The dumplings are then cooked in a khatti mitthi gujarati toor dal.

INGREDIENTS FOR DOUGH

  • 1 cup whole wheat Flour
  • 1 tbsp oil
  • 1 tsp Red Chilli Powder
  • ¼ tsp Turmeric Powder
  • salt

METHOD

Take wheat flour + turmeric powder + red chilli powder  + salt + oil in a plate .

Knead it to a soft dough by adding water. Grease the dough with little oil and keep it aside for 30 mins .

INGREDIENTS FOR STUFFING

  • 4 Boiled , Peeled and mashed Potatoes
  • ½ cup freshly grated coconut
  • ½ tsp  Green Chilli paste
  • ½ tsp garlic paste
  • 1 tbsp Lemon Juice
  • 1/4th Red Chilli Powder
  • ½ tsp Garam Masala
  • ¼ cup Coriander Leaves
  • 1/2  tsp sugar
  • 1 tbsp chopped cashew raisins / kishmis [ optional ]
  • Salt to Taste

 

METHOD

Take all the ingredients one by one in a plate and mix together.

Knead into a dough .Take 1 tbsp of the stuffing , roll and make small balls of it .

MAKING THE STUFFED DHOKLIS [ 12 – 15 stuffed dhoklis ]

Take a portion of a kneaded dough and make a small puri sized flat bread , Add a tablespoon mixture in the middle like we do for kachoris .Bring the edges together to form a kachori and seal it  properly

INGREDIENTS FOR DAL

For Dal

  • 1 cup cooked and blended toor Dal [ dal puree made from 1/2 cup dal ]
  • 2 tbsp ghee
  • 1 bay leaf
  • 1 tsp Mustard Seeds
  • 1 tsp jeera / Cumin Seeds
  • ¼ tsp Turmeric Powder
  • 4 – 5 Curry Leaves
  • 2 or 3 Dry Red Chilli
  • 2 or 3 green chilli
  • 3 or 4 Cloves
  • 2 inch cinnamon stick
  • ¼ tsp hing
  • 3 or 4 pieces of kokam as per the tanginess you like
  • 3 tbsp Peanuts
  • 1 tbsp Jaggery
  • Salt to Taste
  • ghee + coriander leaves + finely chopped onions for serving

METHOD

Heat ghee in a deep bottom pan .

Add mustard seeds & cumin seeds ,cinnamon, dry red chilli, cloves , curry leaves, bay leaf ,hing  , peanuts and turmeric and stir fry for few seconds  .

Add the 1 cup blended dal + 21/2 cup water + kokam + jaggery + salt  .

***The dal thickens on cooling so adjust water accordingly .

Bring the dal to boil .

Once the dal starts boiling , add the stuffed dhokli

Cover partly and cook the dhoklis with dal for 12 – 15 minutes. Stuffed dal dhokli is ready.

While serving sprinkle some chopped onions + coriander leaves and drizzle little ghee and serve hot.

NOTES

  1. Seal the dhoklis properly before adding them to dal , else they might open while cooking .
  2. Always put the dhoklis in boiling dal or else they will stick to each other.
  3. After adding dhoklis if the dal becomes thick you can add little hot water and adjust consistency
  4. You can even boil the peanuts with dal in pressure cooker and then add it to the tempered dal.
  5. Instead of kokam you can add tamarind or tomato .
  6. Instead of potato stuffing, you can make any stuffing of your choice for variation  .
  7. Always add the amount of dry and fresh masala specified, otherwise the dal will be very bland
  8. Stuffed Dal Dhokli is slightly heavy to digest so try having for lunch .
