TURI BHASAR / SINDHI GILKI RECIPE

Mild delicious sponge gourd cooked with simple fresh herb and spices Turai ki sabzi / Turai/ Toori/ Gilki  /soft gourd is a very healthy vegetable,it is easy to cook and very easy to digest. It is good for summer , as it  is very cooling for the body.

 It belongs to the gourd family , so this recipe can be tried with any gourd like parval / tinda / dudhi /ridge gourd etc .

Sponge gourd is quite lower in immersed fats as well as calories. It is contains high amounts of dietary fiber, vitamin C, riboflavin, zinc, thiamine, iron, and magnesium. Some of the health preferences linked to the Sponge gourd appears beneath. Phenomenal Blood Purifier.

Turi bhasar / Sindhi gilki recipe
Ingredients 
  • • 500gms sponge gourd / gilki/ galka / turai.. washed, peeled, chopped into small cubes
  • • 2 onions finely chopped
  • • 3 tomatoes finely chopped
  • • 1 green chili finely chopped
  • • 3-4 tsp oil
  • • ½, tsp red  chili powder
  • • 1 tsp dhaniya powder
  • • ¼ tsp haldi powder
  • • ¼ tsp black pepper powder
  • • ¼ tsp garam masala powder
  • • 2 tbsp chopped coriander leaves

METHOD
  1. In a Pressure cooker, heat oil. Add onions and saute on medium heat until golden in colour.
  2. Add chopped sponge gourd, tomatoes, all the dry masalas except black pepper powder and garam masala. Add salt and give it a mix.
  3. Cover the lid and cook on high flame for 1 whistle, then simmer the  flame and cook for 5 mins. Switch off the flame.
  4. Let the pressure release.  Open the lid and keep the cooker on high flame.  Keep stirring untill the excess moisture is evaporated.
  5. Finally,  garnish  with chopped coriander leaves, garam masala and black pepper powder.
  6. Serve hot with sindhi  chhuri khichadi or fulka.
Turi bhasar / sindhi gilki recipe

Khichdi, khichri, khichadi, khichari, or kichini,  is a dish where rice is cooked with mung beans, and as it turns out, can be anywhere from dry to mushy.

It is like regular rice recipe .Soak 1 cup of rice + 1/4 cup of split green moong dal. Cook both together with little salt till soft .
