Spicy chicken bruschetta
CRISPY GARLIC BREAD TOPPED WITH CHICKEN / SPICY CHICKEN BRUSCHETTA
INGREDIENTS
- Very thinly sliced boneless chicken – 250 gms
- Olive oil – 1 tbsp
- Salt to taste
- Pasta sauce – 3 tbsp
- Tomato ketchup – 1 tsp
- Chilli sauce – 1 tsp
- Salt to taste
- Big garlic loaf
- Butter as required
- Cheese grated as required
- Mixed herbs / oregano
- Chilli flakes
- Tomato ketchup / dips to serve
PREPARATION
Finely chop or mince the boneless chicken .Clean ,wash ,rinse and drain off the excess water .
Heat oil in a pan and the chicken + salt and stir fry for a min .
Cover the pan and allow the chicken to sweat for 2 or 3 mins .[ leave water ]
Open the lid and stir fry , till the chicken cooks completely and all water evaporates .
Add pasta sauce + chilli sauce + ketchup and mix well .
Off the flame and allow it to cool .
METHOD [ PREHEAT the oven at 190 * convectional mode ]
Slice the garlic bread ,apply butter generously all over .
Spread a layer of chicken ,
Top it with load of grated cheese .
Bake it for 15 to 18 minutes at 190 *
Till the cheese melts and bread becomes crispy .
Put it in the oven to bake .
Remove it and serve hot by sprinkling mixed herbs / chilli flakes along with any dips or sauces .
NOTES

- You can use leftover fried chicken pieces or chicken tikka or any veg topping also like paneer.
- When you have to use loads of cheese – take a mixture of grated paneer + cheese .
- Instead of adding sauces to the chicken – you can stir fry the chicken and finally add little soya sauce + pepper pwdr .
- You can also marinate the chicken with barbeque sauce .
