Sugar free gajar ka halwa with jaggery
SUGAR FREE GAJAR KA HALWA WITH JAGGERY
INGREDIENTS
- Grated red carrot – 2 cup
- Grated jaggery – 1/2 or 3/4 cup or as per taste
- Milk – 1/2 cup
- Cardamom pwdr – 1/4 tsp
- Milk pwdr – 1 tsp [optional ]
- Ghee – 1 or 2 tsp
- Almonds / badam soaked in hot water – few
PREPARATION –
- Soak the badam in hot water for few hours.Peel the skin.and slice it thinly.
- Peel the carrot and grate it .
METHOD
Heat ghee in a pan and add the grated carrot .
Stir and cook 2 – 3 mins .
Reduce the flame to low and add milk ,mix well.
Cover and cook till complete milk is absorbed .
Stir in between .
Once the milk is completely absorbed , add cardamom pwdr + jaggery and mix well .
Stir and cook till ,the jaggery melts .
Once the jaggery melts add the milk pwdr , mix well and cook till the halwa thickens slightly.
Off the flame and garnish with almonds .
Halwa is ready to serve either hot or cold.

NOTES
- Cook on low flame and fry the carrot well or your halwa will have raw taste.
- Buy organic jaggery .
- You can also add khoya .
- Instead jaggery you can use sugar or milk maid.
- Milk pwdr gives more taste .
