SUGAR FREE GAJAR KA HALWA WITH JAGGERY

Sugar free gajar ka halwa with jaggery

INGREDIENTS

  • Grated red carrot – 2 cup
  • Grated jaggery – 1/2 or 3/4 cup or as per taste
  • Milk – 1/2 cup
  • Cardamom pwdr – 1/4 tsp
  • Milk pwdr – 1 tsp [optional ]
  • Ghee – 1 or 2 tsp
  • Almonds / badam soaked in hot water – few

PREPARATION –

  1. Soak the badam in hot water for few hours.Peel the skin.and slice it thinly.
  2. Peel the carrot  and grate it .

METHOD

Heat ghee in a pan and  add the grated carrot .

Stir and cook 2 – 3 mins .

Reduce the flame to low and add milk ,mix well.

Cover and cook till complete milk is absorbed .

Stir in between .

Once the milk is completely absorbed , add cardamom pwdr + jaggery and mix well .

Stir and cook till ,the jaggery melts .

Once the jaggery melts add the milk pwdr , mix well and cook till the halwa thickens slightly.

Off the flame and garnish with almonds .

Halwa is ready to serve either hot or cold.

NOTES

  1. Cook on low flame and fry the carrot well or your halwa will have raw taste.
  2. Buy organic jaggery .
  3. You can also add khoya .
  4. Instead jaggery you can use sugar or milk maid.
  5. Milk pwdr gives more taste .
