VEG DALCHA / SAALNA FOR BIRYANIS OR PULAO

INGREDIENTS

  • Toor dal – 4 tbsp
  • Chana dal – 3 tbsp
  • Oil – 2 tsp
  • Whole garam masla – 1 piece of cinnamom + 2 clove + 2 green cardamom
  • Onion finely chopped – 1
  • Tomato finely chopped – 1
  • Brinjal sliced – 2 small OR any other veges
  • Raw mango – 2 small piece [ optional ]
  • Tamarind – small goose berry size
  • Ginger garlic paste – 1 1/2 tsp
  • Red chilli pwdr – 1tsp or as per taste
  • Coriander pwdr – 2 tsp
  • Garam masala pwdr – 1/2 tsp
  • Turmeric pwdr – 1/2 tsp
  • Finely chopped mint + coriander leaves – 1 cup
  • Salt to taste

PREPARATION

  1. Clean .wash and soak both the dals for 20 mins .Pressure cook it with turmeric + salt .
  2. Once done mash it and keep aside .
  3. Slice the brinjal into thin wedges to save cooking time.
  4. Soak the tamarind in 1 cup of hot water , squeeze and extract the juice .

METHOD

Heat oil in a pan and add the whole garam masala and fry .

Add onions and fry till brown .

Add ginger garlic paste and fry till raw smell leaves .

Add tomatoes + salt and fry till oil separates.

Add chilli pwdr + turmeric + garam masla pwdr + coriander pwdr and fry .

Add coriander leaves + mint leaves and fry till leaves shrink.

Add brinjal + mango piece and mix well ,so that it is coated with the masalas .

Add tamarind juice and cook for a minute for raw smell of the tamarind to leave .

Add 1 1/2 or 2 cup of water, cover and cook  for few minutes till the brinjal softens .

Add the dal and mix well .

Adjust hot water if required ,to adjust consistency .

*** it should not be very watery .the gravy thickens on cooling .

Simmer on low for a minute and off the flame .

Garnish with finely chopped coriander leaves .

Veg dalcha is ready to serve with biryanis / pulaos / plain rice or parathas .

NOTES

  1. The same recipe goes for non veg dalcha – use mutton or chicken .
  2. Instead of brinjal ,we can use bottle gourd / pumpkin / potato / drumstick etc just like sambar .
  3. It is very similar to sambar ,the only difference is we use garam masala instead of sambar masala .
  4. Instead of taking 2 dals ,we can just make with chana dal .
  5. Mango is optional .
