Yam / suran cutlet

INGREDIENTS

  • Yam – 300 or 400 gms [we need 2 cup of mashed yam ]
  • Boiled and mashed potato – 1 cup
  • Besan – 2 tbsp
  • Ginger garlic green chilli paste – 1 tbsp
  • Jeera pwdr – 1/2 tsp
  • Chilli pwdr – 1/2 tsp
  • Turmeric – little
  • Chaat masala pwdr – 1/2 tsp
  • Garam masala – 1/2 tsp
  • Finely chopped coriander leaves – 1/4 cup
  • Bread crumbs for coating
  • Corn flour slurry – 2 tbsp corn flour + 1/2 cup water
  • Salt to taste
  • Oil to deep or shallow fry

PREPARATION

  1. Apply little oil to your palms and fingers while handling yam . remove the skin and chop it into small cubes.
  2. Wash it thoroughly .Boil it with little turmeric and salt.
  3. Cook till soft .Don’t over cook .Drain the water and keep it to cool .
  4. Mash it well ,see that there are no lumps.
  5. Pressure cook potatoes ,peel and mash it .

METHOD

Take the mashed yam and potato in a mixing bowl.

Add besan + salt + spice pwdrs + coriander leaves and mix well .

Make a smooth dough .

** If you feel the mixture is very loose ,you can add bread or bread crumbs to get a tight mixture .

Divide the mixture into equal portions and roll it into smooth balls.[ lemon size ]

*** If the mixture is sticky ,you can refrigerate it for few hrs.

Now shape the balls into any desired shapes .

Dip each cutlet in corn flour slurry and roll it over the bread crumbs.

Once done you can refrigerate and use it when required.

Heat oil for deep frying .

** I feel in shallow frying  food absorbs more oil than deep frying .

Slide in each cutlets .Few at a time .

Flip and fry all over till golden and crispy

Drain and remove on absorbent paper.

Serve hot with any sauce /dips /chutney .

When the cutlets are hot , top it with grated cheese to tempt the kids to eat .

NOTES

  1. Adjust spice pwdr as per taste.
  2. Instead of suran ,we can try this recipe with arbi .
  3. Adding finely chopped onions adds to the taste and texture of the cutlet.
  4. I have added potato for binding ,it is optional- you can add oats pwdr or bread crumbs or besan  for binding.
  5. Instead of bread crumbs ,you can coat it with rava.
  6. Sometimes while handing suran ,hands start itching so apply oil .
  7. Some are allergic to yam ,they get itchy throat – to avoid that we can add lemon juice or tamarind pulp while cooking any recipes from suran.

Moreover, they are even credited with increasing the production of red blood cells.
