MIXED VEG MALAI CURRY
INGREDIENTS
- Mixed veges small pieces – 2 OR 3 cups [ potato / carrot / peas / beans / cauliflower ]
- Onion – 1 finely chopped
- Ginger garlic paste – 1 tsp
- Tomato finely chopped or puree – 2
- Oil + ghee – 1 ½ tbsp
- Chilli pwdr – 1 ½ tsp or as per taste
- Coriander pwdr – 1 tsp
- Turmeric pwdr – ¼ tsp
- Garam masala or kitchen king masala – 1 tsp or garam masala – ½ tsp
- Jeera – 1/2 tsp
- Fresh cream – 2 or 3 tbsp
- Tomato ketchup – 1 tbsp
- Sugar – 1/2 tsp
- Salt to taste
- Kasoori methi – 1 or 2 tsp
- Finely chopped coriander leaves to garnish [ optional ]
- lemon slices to serve
PREPARATION
- Chop the veges into small pieces to save cooking time also kids don’t make fuss while eating .
- Either finely chop trhe tomatoes or make puree form 2 medium sized tomatoes .

METHOD
Heat oil + ghee in a pan ,add jeera and let it splutter .
Add onions and fry till light golden .
Add ginger garlic paste and fry till raw smell leaves .
Add tomato puree + salt and cook till oil is released .
Add chilli pwdr + coriander pwdr + kitchen king masala pwdr + turmeric and fry for few seconds.
Add sugar + ketchup and give a mix .
Add the veges and stir fry for a minute .
Add 2 cup of water and mix well .
Cover and cook till the veges are done – stir in between .
Add fresh cream and mix well .
Simmer on low flame for a minute – the gravy has to of semi thickness consistency .
- also the gravy thickens on cooling .
Add kasoori methi pwdr and mix .
Malai mix veg is ready to be served with any Indian bread or rice recipes .
NOTES
- For restaurant kind of colour add a pinch of tandoori food colour .
- Use Kashmiri chilli pwdr for more colour .
- For gravy you can also add 1/4 of fresh curd .[ not sour ]
- You can also add a tbsp of cashew paste for rich texture .
- You can add paneer cubes also in the end and give a mix.
- Y not add fried cashews .
- To add more to the this recipe , just stir fry ½ cup of capsicum cubes and add in the end.
