DIPS MADE FROM CHENA

INGREDIENTS

  • Milk – 1/2 ltr
  • Vinegar / lemon juice – 1 1/2 tbsp
  • Curd / butter milk – 2 tbsp
  • Fresh cream – 1 tbsp
  • Olive oil – 2 or 3 tbsp
  • Lemon juice or vinegar – 1 or 2 tsp for tanginess [ optional ]
  • Salt – 3/4 tsp or adjust as per taste
  • Muslin cloth

PREPARATION

  1. Boil the milk , once it starts boiling add the vinegar or lemon juice.
  2. Allow it to curdle , keep stirring.
  3. Let it curdle completely.
  4. Once done , immediately strain it through a strainer so that the excess water drains away  .
  5. Keep it side for 15 mins to cool.
  6. No need to hang like we do for paneer .
  7. Don’t make it very dry like ,little moisture is ok .

METHOD

Break the lump and transfer to a  mixie jar .

Add salt and blend  .

Now add the curd and blend.

Add the fresh cream and blend .

Finally add the olive oil and blend .

*** we can also add cheese and grind to get chessy dip .

The base for dips are ready .

Now you can make different varieties of dips by adding different ingredients as per taste like –  ketchup / chilli sauce /Minced garlic/ green chutney  / mint leaves /coriander leaves / dill leaves/ chilli flakes / herbs/ oregano  /tandoori masala pwdr /chopped onions chopped /onions / honey /peanut paste /butter /dry fruits / avocado paste celery /pepper pwdr / spring / mustard sauce  .

**** Just mix any ingredients in any proportion as per your taste .

NOTES

  1. If you feel the mixture is very thick after grinding ,you can add 1 or 2 tbsp of milk and grind.
  2. For tangy taste add lemon juice or vinegar . Also they act as preservative .
  3. Stays fresh upto 2 weeks in fridge .
  4. You can make without oil ,by adding milk .Oil gives the smooth texture to it .
  5. Adding ketchup + finely minced onion and garlic + chilli sauce + herbs + lemon juice will give you KFC Thousand island dip .
  6. You can use it for salads .
