A food rich in protein, chicken can help with weight management and reduce the risk of heart disease. Chicken contains the amino acid tryptophan, which has been linked to higher levels of serotonin (the “feel good” hormone) in our brains. Chicken is rich in an array of important nutrients and can be an excellent addition to a healthy, well-rounded diet.

Chicken is one of the best non-vegetarian sources of protein .

INGREDIENTS FOR MARINADE

  • Chicken drumstick or thigh portion – 500 gms [ we can use chicken lollipop or even boneless chicken ]
  • Soy Sauce- 1 tsp
  • White Vinegar or lemon – 1 ½  tsp
  • Kashmiri Chilli Powder – 1 tsp or as per taste
  • Ginger Garlic Paste – 2 tsp
  • Black Pepper Powder- ¼  tsp
  • Salt- to taste

FOR THE BATTER

  • Cornflour  – ¼  cup
  • Maida/ All purpose flour – ¼ cup
  • Egg – 1 [ optional ]
  • Kashmiri Chilli Powder – 1 ½   tsp
  • Tandoori food colour – a pinch
  • Salt to taste

INGREDIENTS FOR THE SAUCE

  • Finely chopped ginger  – 2 tsp
  • Finely chopped garlic – 1 ½  tbsp  
  • Oil – 1 tbsp
  • Onion finely chopped – ¼ cup
  • Spring onion greens, chopped – 2 tbsp
  • Sauce mixture – 1 tbsp schezwan Sauce + 2 tbsp chilli sauce +  1 ½  tsp Soya Sauce + 1 tbsp Tomato Ketchup +  1 tsp sugar + 1 tsp vinegar  
  • Corn flour slurry –  2 tsp +  4 tbsp water

PREPARATION

  1. Marinate the chicken with marinade items. Mix well and set aside in fridge for 30 mins or more. [ more the marination time , better the taste and texture ]
  2. Make a thick batter of maida + cornflour + beaten egg + chilli powder + food colour + salt by adding water as required .

METHOD

Heat oil in a pan or skillet for deep OR shallow frying frying .

Dip the marinated chicken in the batter one by one in hot oil.[ don’t  crowd the oil ]

Flip and fry after 2 or 3 mins .

Fry on other side also for few mins .

Now stir and fry till golden  from all sides .

Drain and remove .

NOTE – you can serve like this as a dry starter with any dips / mayo / chutney etc

MAKING DRUMS OF HEAVEN

Heat 1 tbsp oil in a pan, add the chopped ginger + garlic.

Stir fry for few seconds . [ colour should not change ]

Now add the chopped onions , stir fry on high heat for a minute.

Add the sauce mixture and give a nice mix for few seconds  .

Add the corn flour slurry and mix well.

Stir and cook till the sauce becomes thick ,shiny / glossy and smooth.

Add the  fried chicken and mix  , till the sauce is coated well .

Off the flame .

Finally garnish with chopped spring onion greens.

Serve hot .
