Eggless custard powder cake


INGREDIENTS [ ingredients at room temperature ]

  • 1 cup milk [ 2 or 3 tbsp extra if needed ]
  • ½ cup vanilla custard powder
  • 1 ½ cup maida
  • 1 cup powder sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ cup oil /butter

METHOD

Sieve together maida + baking powder + baking soda twice .

DRY MIXTURE IS READY

Take sugar in a mixie jar and grind into fine powder .

Now add milk and blend.

Add custard powder and blend.

Add oil and blend well.

WET MIXTURE IS READY

Take a thick bottom pan / kadai / cooker and keep on medium flame for 5 mins.

[ if using aluminium pan , then place a tava below ]

Keep a ring /stand in centre

Meanwhile add the wet mixture into the dry mixture gradually .

Keep mixing so that no lumps are formed .

If the batter is thick adjust by adding 2 or 3 tbsp milk .

Grease a tin with butter / oil / ghee and dust it with little dry flour.

Line it with butter paper .

Pour the batter and gently tap it twice .

Place the tin on the ring and close the lid tighly so that heat doesn’t escape .

Turn the flame to medium flame .

Bake it for 40 mins . [ check after 35 mins ]

It may take more time .

Once done check test by inserting a toothpick in the middle of the cake .

Cool it completely for atleast 15 to 20 mins then cut into pieces.

You can bake it in convection mode at 180 * C for 35 to 40 mins .

Notes

  1. Custard powder is a good alternative for people who want to avoid eggs.
  2. Use demerara sugar instead of normal sugar ,colour will change.
  3. The top and bottom slightly browns up giving it a golden yellow in the middle.
  4. Adjust sugar as per taste ¾ to 1 cup .
  5. The custard flavour gives a very nice flavour to this cake.
  6. If you don’t have custard powder just substitute it with cornflour + vanilla essence + yellow food colour and it gives the same result.
  7. I made this cake in my natives where I did not have any baking equipments – I used steel tin ,instead of butter paper used greased magazine sheet ,used bowls instead of measuring cups.
  8. You can reduce 1/4 cup oil and replace with milk.
