EGGLESS TOPO MAP CAKE

Topo map cake layered cake from Malaysia resembling topographic map .The layers from the cake gives a look of a topographic map, hence the name. We can also call it wave love cake .

We can also make with other color combo of your choice.

INGREDIENTS  

  • Maida / APF – 1 ½ cup
  • Sugar – ¾  cup  
  • Vanilla essence – 1 tsp
  • Oil – ¼ cup
  • Thick curd – ½ cup [ room temperature]
  • Water – ½ cup [ room temperature ]
  • Baking pwdr – 1 tsp
  • Baking soda – ½ tsp
  • Vinegar – 1 tbsp
  • Green food colour – few drops
  • Vanilla essence – 1 tsp
  • Cocoa pwdr – 2 tbsp  or as required [sweetened cocoa pwdr I prefer ]

PREPARATION

  1. Sieve the maida + baking pwdr twice. Transfer to a mixing bowl .
  2. Powder the sugar .
  3. Grease and dust the baking tin.
  4. Preheat the oven at 180 * C

METHOD

In a mixie jar take curd + vinegar + baking soda and blend well . Keep the jar closed aside , for 5 minutes till the mixture becomes frothy .

Once the mixture becomes frothy, add powdered sugar + water  + oil  + vanilla essence in the same jar and blend  well.

Now gradually add this wet mixture into the sieved flour and  mix gently with a spatula or a whisk till no lumps – do not over mix  or the cake will become hard — after adding flour never blend the batter for any cakes. You have to mix with spatula or a whisk .

***Now the batter is ready.[ it should be of thick pourable consistency .

Divide the batter in 2 bowls .

** We can also make with three colour ,as seen in the video

In one add green colour and mix well .

*** We can pour the batter or use a piping bag as shown in the video .

Pour a ladle of plain vanilla batter in the greased and spread it

Sift a very very thin layer of cocoa powder on top until evenly covered.We just need a single thin layer of cocoa pwdr .

Now pour a ladle of green batter and spread it with a spatula .

Again sift a thin layer of cocoa powder on top until evenly covered

Repeat the process till the batter gets over .

Don’t dust cocoa pwdr on top .

Tap the tin gently .

Bake it for 35 mins to 40  minutes in a preheated oven at 180* C. 

***Baking time depends on the width of the tin ,wider the tin lesser the baking time.For loaf tin it takes upto 45 mins.

Check after 30 minutes .

Bake it till the tooth pick inserted in the centre comes clean .

Allow it to cool completely .

Run a knife around the edges of the tin to loosen the cake and invert the tin over a plate. Again allow it to cool.

Cake is ready to serve .

Now you can slice it and serve it .

NOTES

  1. Once the batter is ready ,be quick  .
  2. You can try the same recipe for any other cake recipe ,just use different essence and colours accordingly.
  3. Same recipe goes for marble cake. marble cake of many flavours and colours .
