 FLOWER MATHRI recipe

INGREDIENTS

  • Maida – 1 cup
  • Oil / ghee – 2 tbsp
  • Ajwain – ¼ tsp
  • Kalonji or black sesame til – 1 tsp
  • Oil for deep fry
  • Warm Water to knead
  • Salt to taste

PREPARATION

Sieve the flour .

METHOD

Take flour in a mixing bowl ,add ghee + ajwain + salt and mix well with clean hands .

Add water little by little and make a stiff dough .

Cover and keep aside for an 30 mins or 1 hour.

Now divide the dough into equal portions.

Roll each portion into a smooth ball .

Roll each ball into a little thick  disc .

Take a cookie cutter or bowl and cut it into circles as shown in image .

Now make 8 cut impressions as shown in the pic.

For petal shape ,gather and twist the portion at the edge as shown in image .

In middle apply little water and sprinkle black sesame or kalonji and press it .

Take a tooth prick and make holes all over .

Heat oil in a pan .

To check if the oil is ready for frying ,add a tiny piece of dough in the oil ,if the dough raise up immediately – it means the oil is ready for frying .

Once the oil is hot enough ,lower the flame to medium .

Gently slide in the mathris .

Fry on both sides on medium flame till crispy.

Once done drain and remove on absorbent paper .

Once it cools store in airtight container .

NOTES

  • There are many variation to this recipe.
  • Ucan add chilli pwdr ,you can use oregano / mixed herbs .
  • V can add different spices in the flour like kasoori methi / black pepper pwdr / jeera / hing / chaat masala / garam masala etc etc .
  • Also you can make plain ones with just ajwain.
