GARLIC KNOTS /GARLIC BREAD /GARLIC PAV

GARLIC KNOTS recipe

INGREDIENTS

  • Maida – 1 cup + 2 tbsp
  • Warm water – ½ cup [1 tbsp less ]
  • Olive oil – 1 tbsp
  • Yeast – 1 tsp
  • Sugar – 3/4 tsp
  • Salt – ¼ tsp

INGREDIENTS FOR GARLIC MIXTURE –

  • Olive oil – 2 tsp
  • Melted butter – 2 tsp
  • Finely minced or grated garlic – 1 tsp
  • Herbs / oregano /rosemary – 1 tsp to sprinkle

Make a mixture of olive oil + melted butter + garlic and keep aside .

*** you can use active dry yeast or instant yeast

*** 1 cup flour gives 6 small knots

PREPARATION IF USING DRY ACTIVE YEAST  – Mix sugar + yeast + warm milk and keep aside for 10-15 mins to rise. The mixture will become frothy and rise up .Now it is ready to be added in the flour and proceed with remaining steps .

GARLIC KNOTS recipe

PREPARATION IF USING  INSTANT DRY YEAST – I have used Prime brand

STEP – 1

Sieve the flour and keep aside .

Take warm water + + oil +  sugar + salt + yeast and mix well .

Add the sieved flour and mix well.

Take the mixture on lightly floured surface and knead for 4 to 5 mins .

Adjust flour or water if required to get a soft and sticky dough .[not very sticky ]

Grease a big bowl and keep the dough in it .

Rub little oil over the oil .

Cover and keep aside for 1 or 2 hrs till it doubles up .

STEP – 2

Remove the dough and punch it lightly.

Knead lightly for a minute only .

Flatten it using a greasy  rolling pin on a greasy surface .

Roll it into a thick square of ½ inch thickness .

Using a knife slice it into strips of 5 inch .

Dust the surface with flour , take one strip and roll it into rope .

Now take in hands and make a soft knot –  just the way we make knots with normal rope.

Arrange on a greased tray or a tray lined with parchment paper .

Keep some distance between two knots roughly 2 inch distance .

Cover the tray with a thin napkin or kitchen towel and again keep aside in a warm place for 1 hr .

The knots will double in size .

GARLIC KNOTS

STEP – 3 BAKING

Preheat the oven at 200 * C .

Bake the knots for 15 mins till light golden .

Once done remove and  immediately rub garlic butter mixture all over and sprinkle the herbs .

Cover and keep for 1 or 2 mins for the garlic mixture to be absorbed .

Garlic knots are ready .

NOTES

  1. You can play with the dough and give any shape .But it should be thick and not flat .
  2. Same recipe goes for garlic fingers or garlic bread .
