GREEN CHILLI PICKLE /HARI MIRCH KA ACCHAR

Spicy, tangy, and loaded with flavor, Green Chilli Pickle or Hari Mirch ka Achar is a delicious North Indian style . Fresh green chilies are pickled with mustard seeds and lemon juice. This pickle goes very well with any Indian meals.
INGREDIENTS
- green chilli – ½ kg
- oil – ½ cup
- oil – 2 tsp
- rai dana / crushed yellow mustard seeds – ½ cup
- lemon juice – ½ cup
- turmeric – 1 tbsp
- fenugreek seeds – 1 tbsp
- asafoetida – ½ tsp
- salt – approximately 4 to 5 tbsp

METHOD
Clean , wash and pat dry the green chilli . There should be no moisture.
Discard the stalks.
Slice into thin even roundels .
Take the mustard seeds + oil + salt + turmeric and pulse beat . [ don’t make it fine , it has to be coarse ]
Add this to the green chilli and mix well.
Heat 2 tsp oil add the methi seeds and fry till aromatic . [ don’t burn ]
Add asafoetida , give a mix and off the flame .
Crush it and to the green chilli mixture .
Mix well .
Transfer to a jar / bottle and let it mature for minimum 3 days or more .
Once it matures , it is ready to use .
Serve it as a side dish .
